3 tablespoons butter
2 stalks celery, finely chopped
1 onion, chopped
½ teaspoon salt
1 carrot, grated
1 apple - peeled, cored, and chopped
1 ½ pounds ground chicken
1 egg
⅓ cup applesauce
2 tablespoons milk
½ cup dry bread crumbs
2 teaspoons poultry seasoning
1 teaspoon ground sage
½ teaspoon salt
¼ teaspoon ground black pepper
⅓ cup applesauce
1 tablespoon Dijon mustard
2 teaspoons honey

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt the butter in a skillet over medium heat, and cook the celery and onion with 1/2 teaspoon of salt, stirring occasionally, until the onions are soft and browned, about 12 minutes. Stir in the carrot, and cook for 5 more minutes; stir in the apple, and remove the mixture from the heat.
  • In a mixing bowl, lightly mix together the ground chicken, egg, 1/3 cup of applesauce, milk, bread crumbs, poultry seasoning, sage, 1/2 teaspoon of salt, and black pepper. Mix in the cooked vegetable-apple mixture. Form the mixture into a loaf, and place into the center of a 9x12-inch baking dish.
  • In a bowl, mix together 1/3 cup of applesauce, the Dijon mustard, and honey into a smooth mixture, and spread the glaze over the top and sides of the meat loaf.
  • Bake in the preheated oven for 30 minutes, then reduce the temperature to 375 degrees F (190 degrees C) until the internal temperature of the loaf is 180 degrees F (80 degrees C), about 30 more minutes. Allow the loaf to rest for 5 minutes before serving.

1 1/2 lbs ground chicken
2 apples, cored, diced, leave the the peel on
1 medium onion, diced
2 stalks celery, diced
2 egg whites
1 cup whole wheat bread crumbs
2 tablespoons fresh dill, chopped
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
2 tablespoons fat-free honey mustard dressing (or honey mustard condiment can be used to shave 1 point off each serving, my kids like the sweeter d)

Steps:

  • Spray a large skilet with cooking spray. On medium heat, add onions and celery cook until they begin to soften about 2 minutes. Add apples and continue to cook until the apples are softened and onions are slightly browned, about 8 minutes. Take off the heat or transfer to a bowl to cool for about 15 minutes.
  • In another bowl, mix together ground chicken, egg whites, dill, bread crumbs, sat, pepper, nutmeg, and lemon zest.
  • Add apple mixtues and combine well.
  • Coat a loaf pan with cooking spray. Put mixture into loaf pan pressing meat into corners and even out the top. Drizzle honey mustard dressing over the top.
  • Bake at 375 degrees for 1 hour and 15 minutes or until center is at 165 degrees. Let cool for 5 minutes begore slicing into six servings,.

1/2 tablespoon fresh marjoram, chopped
1 1/2 cups granny smith apples, finely chopped
3 large eggs
2 teaspoons salt (to taste)
3 tablespoons creamed horseradish
1 onion, finely chopped
3/4 cup ketchup
2 tablespoons prepared mustard
1 (16 ounce) can frozen condensed apple juice
1/2 cup fat free chicken broth
1/2 cup ketchup
2 -3 teaspoons asian five-spice powder
