Tips:
- Use unsweetened cocoa powder for a richer chocolate flavor.
- Chill the egg whites for at least 30 minutes before whipping. This will help them whip up more easily and give the cookies a lighter texture.
- Beat the egg whites on high speed until stiff peaks form. This will take about 2-3 minutes.
- Gradually add the sugar to the egg whites while continuing to beat on high speed. This will help prevent the cookies from becoming grainy.
- Fold in the chocolate chips and nuts, if desired. Be careful not to overmix, or the cookies will become tough.
- Drop the cookie batter by rounded tablespoons onto a parchment paper-lined baking sheet. Leave about 2 inches of space between the cookies.
- Bake the cookies in a preheated oven at 300°F for 25-30 minutes, or until the tops are set and the bottoms are golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
