9 cups cubed red potatoes ( about 3 pounds)
1/2 cup diced onion
1/2 cup diced celery
1/4 cup pickle relish or 1/4 cup dill pickle relish,
3 hard-cooked large eggs, chopped
1 garlic clove, minced
3/4 cup low-fat sour cream
1/3 cup fat-free mayonnaise
2 tablespoons chopped fresh parsley
1 teaspoon dry mustard
3/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a dutch oven; cover with water, and bring to a boil. Cook 8 minutes or until tender. Drain; place in a large bowl. Add onion and next 4 ingredients; toss gently. Combine sour cream and next 5 ingredients stir well. Pour over potato salad; toss gently to coat. Cover and chill.

3 slices turkey bacon (Louis Rich or other brand name)
1/2 cup scallion, chopped
1/4 cup reduced-calorie mayonnaise
2 tablespoons red wine vinegar
2 tablespoons fresh parsley, chopped
1/2 teaspoon table salt
1/4 teaspoon black pepper, freshly ground
