1 lb ground beef
1/2 teaspoon salt
1/2 teaspoon chili powder
1 cup shredded cheddar cheese
1/2 cup hickory flavored barbecue sauce
1 (11 ounce) can mexicorn, drained
1 (8 ounce) can tomato sauce
1 cup all-purpose flour
1/2 cup yellow cornmeal
2 tablespoons sugar
1 teaspoon salt
1 teaspoon baking powder
1/4 cup butter
1/2 cup milk
1 egg, beaten
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees.
  • For filling, brown ground beef, drain.
  • Stir in salt, chili powder, 1 cup shredded cheddar cheese, barbecue sauce, corn, tomato sauce. Set aside.
  • For crust, combine flour, cornmeal, sugar, 1 teaspoon salt and baking powder, but in butter. Blend in milk, egg, 1/2 cup shredded cheddar cheese.
  • Spread crust mixture over the bottom and up the sides of a greased 9 inch baking dish.
  • Spoon filling into crust.

1 can (11 ounces) Mexicorn, drained
1 can (8 ounces) tomato sauce
1 cup shredded cheddar cheese
1/2 cup hickory-flavored sauce

1 cup all-purpose flour

8 ounces tomato sauce
1/4 teaspoon garlic powder
1/4 teaspoon salt

11 ounces sweet corn, drained (like Niblets)
2 cups water
3 tablespoons butter (not spread) or 3 tablespoons firm margarine (not spread)
1/2 teaspoon salt, if desired
3/4 cup milk
2 cups instant mashed potatoes
4 ounces diced green chilies, drained
8 ounces cheddar cheese, shredded
1 medium tomatoes, chopped

Steps:

  • Heat oven to 350°F
  • Lightly grease 2 1/2 or 3 quart casserole.

2 cloves garlic, minced
1 onion, chopped
2 teaspoons chili powder
2 (15 ounce) cans black beans, rinsed and drained
2 (8.75 ounce) cans whole kernel corn, drained
1 (16 ounce) container sour cream
2 cups fresh salsa
5 cups crushed plain tortilla chips
3 cups shredded Cheddar cheese
1 large fresh tomato, finely chopped
3 green onions, chopped

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
