BARLEY BREAD

Barley Bread image

It was cold and icy today; the kind of day to stay inside. My 4 year old and I decided we wanted to bake, but I was out of white or whole wheat pastry flours. So I went on a search of things we could make with my assorted different flours. This is adapted from a recipe I found online. It does not rise much and is a bit crumbly but is a nice dense bread to smear with a bit of butter or dunk into soup.

Categories     Yeast Breads

Time 3h25m

Yield 2 round breads

Number Of Ingredients 9

1 tablespoon yeast
1/2 teaspoon brown sugar
1/2 cup warm water
1 -2 cup barley flour
1 1/2 teaspoons brown sugar
1/2 cup warm water
1 tablespoon canola oil
1 teaspoon salt
1/3 cup white bean flour

Steps:

  • Spray a baking sheet with nonstick spray.
  • Put the first three ingredients (yeast, 1/2 tsp brown sugar and 1/2 cup warm water) in a small bowl and mix well. Let the yeast bubble and foam.
  • In a large bowl add 1 cup of the barley flour and the remaining 1/2 cup warm water. Mix together well.
  • Add the 1 1/2 tsp brown sugar, the oil, and the salt and mix well.
  • Add the yeast mixture and mix well.
  • Add the bean flour and mix well.
  • Add as much more barley flour as you need to make a kneadable dough (mine took the entire 1 more cup).
  • Put some more barley flour down on a work surface and then knead the dough until it is smooth and elastic.
  • Form 2 small balls and place them on the cookie sheet. Make a small cut in the tops of each.
  • Let rise until doubled (mine did not get that big but I baked them after about 2 hours).
  • Preheat the oven to 350 degrees. Bake for 1 hour.

EASY WHOLE WHEAT MALTED BARLEY BREAD

Easy Whole Wheat Malted Barley Bread image

My brother brews beer, and often has leftover grains that he boiled. I came up with this recipe on my own through trial and error and have come up with what I consider a delicious, successful formula. Feel free to alter as you like!

Categories     Breads

Time 6h25m

Yield 2 small loaves, 16 serving(s)

Number Of Ingredients 8

500 g king arthur whole wheat flour
100 g whole milk
200 g warm water
40 g coconut oil
10 g salt
160 g malted barley
1 tablespoon yeast
1 teaspoon sugar

Steps:

  • 1) Take 100 grams of warm water, your sugar and yeast, and mix together. Set aside for 15 minutes in a lukewarm place. If the room temperature is cold, a heating pad may come in handy in your bread making. This is called "Proofing" the yeast. It will be ready once it starts to froth.
  • 2) Divide your flour, milk , oil, salt and malted barley into two bowls in equal measurements. Add remaining 100g warm water in 1 bowl, and the 100g proof mixture into the other bowl. Knead each evenly.
  • 3) After kneading both dough balls evenly, remove from bowls, clean those bowls and then line them with oil, and replace the balls into the two bowls. Let rest and rise for 4 hours. Again, if it's cold where you live, you may want to use a heating pad.
  • 4) Knead both dough balls separately and replace in the bowls. Allow to rise for an additional hour.
  • 5) Combine the dough together, kneading for about 5 minutes. Allow to rise for an additional hour. If you'd like a sourdough bread, allow it to rise longer. You can get an idea what the bread will be like by periodically (every few hours) tasting a small pinch of the bread.
  • 6) When you're ready to bake, divide the dough into 2 long loaves, and bake in a preheated oven for 25-35 minutes or until hard on the outside. Do not overcook. A baking stone comes in handy.
  • 7) Allow to cool. Enjoy your bread however you like. I slice it up and eat it as toast throughout the week. If however you don't plan on eating it immediately, be sure to store it in an airtight container otherwise it will get stale after 2-3 days.

Tips:

  • Use a variety of grains: Don't just stick to wheat and barley. Try using other grains like oats, quinoa, or rye. This will give your bread more flavor and texture.
  • Soak your grains: Soaking your grains before you mill them will make them easier to digest and more nutritious.
  • Use a sourdough starter: A sourdough starter will give your bread a tangy flavor and chewy texture. It's also a natural preservative, so your bread will last longer.
  • Let your dough rise slowly: The longer your dough rises, the more flavor it will develop. Be patient and let your dough rise for at least 8 hours, or even overnight.
  • Bake your bread at a high temperature: This will give your bread a crispy crust and a fluffy interior.
  • Experiment with different toppings: There are endless possibilities when it comes to toppings for wheat and barley bread. Try adding seeds, nuts, dried fruit, or cheese.

Conclusion:

Wheat and barley bread is a delicious and nutritious bread that is easy to make at home. With a little practice, you'll be able to bake perfect loaves of bread that your family and friends will love. So what are you waiting for? Start baking today!
