1/2 cup brown sugar
1 1/4 cups nonfat milk
1/3 cup butter or 1/3 cup margarine, melted
1 cup flour
1/4 teaspoon salt
4 teaspoons baking powder
1 cup wheat germ

Steps:

  • Preheat oven to 425 degrees.
  • In large bowl, beat together the egg, sugar, milk and butter.
  • Mix into the milk mixture the flour, salt and baking powder.
  • Batter may be lumpy.
  • Fold in one cup wheat germ.
  • Spoon mixture into greased muffin tins.

1/2 cup whole wheat flour
1/3 cup packed brown sugar
1 teaspoon baking powder

1 egg
2 tablespoons canola oil
2 tablespoons unsweetened applesauce
STREUSEL:
1/4 cup packed brown sugar
2 tablespoons toasted wheat germ

1 tablespoon cold butter
2 tablespoons finely chopped walnuts

Steps:

  • In a large bowl, combine the flours, brown sugar, baking powder, baking soda and salt. In another bowl, beat the bananas, egg, oil and applesauce until well blended. Stir into dry ingredients just until moistened., Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. For streusel, combine the brown sugar, wheat germ and cinnamon; cut in butter until crumbly. Stir in walnuts. Sprinkle over batter., Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

3/4 cup all-purpose flour
1/2 cup sugar
1/4 cup kretschmer wheat germ, any flavor
1 1/4 teaspoons baking powder
3/4 cup fat-free evaporated milk or 3/4 cup buttermilk
1/4 cup vegetable oil
1/4 cup nonfat yogurt
1 large egg
1 large egg white
1 -2 cup fresh blueberries or 1 -2 cup frozen blueberries

Steps:

  • Preheat oven to 400* Grease or paper line 12 muffin cups, or 6 jumbo size muffin cups.
  • Combine corn meal, flour, sugar, wheat germ and baking powder in large bowl.
  • Combine milk, vegetable oil, yogurt, egg and egg white in small bowl, stir until blended.
  • Add to corn meal mixture, stirring just until moistened.
  • Gently fold in blueberries.

3 Tbsp wheat germ
2 Tbsp firmly packed brown sugar
1 Tbsp all purpose flour
1 Tbsp butter, melted
1/8 tsp pumpkin pie spice
FOR THE MUFFINS
1 1/2 c all purpose flour
1/2 c wheat germ
1/2 c firmly packed, brown sugar
2 1/2 tsp baking powder
1 1/2 tsp pumpkin pie spice
3/4 c mashed bananas (2 bananas)
3/4 c milk
3 Tbsp butter, melted
2 eggs, slightly beaten

Steps:

  • 1. Heat oven to 400 degrees.
  • 2. Grease and flour muffin pan or line with paper liners.

2 cups milk (soy is preferred)
2 eggs (or egg substitute to make 2 eggs)
6 tablespoons honey
6 tablespoons olive oil
2 cups wheat germ
2 cups whole wheat flour

2 1/2 tablespoons baking powder

  • Preheat oven to 350°.
  • Mix all the wet ingredients plus wheat germ together in a large bowl.

1/2 c wheat germ
1/2 c cornmeal
1 beaten egg
1/4 c coconut oil (liquid)
2 Tbsp xylitol
1 tsp baking powder
1/2 tsp sea salt
1 c soy milk

  • 1. Preheat your oven to 400'F. I put my temperature to 375'F because I live at 5,000 feet.
  • 2. Line a 12 cup muffin tin with paper cups. Combine the flour, wheat germ, cornmeal, sugar, baking powder and salt together in a bowl.
  • 3. Combine the egg and milk, then mix in the coconut oil.
  • 4. Stir the liquid ingredients well and then make a well in the dry ingredients and pour the liquid in all at once.
