ΒΌ cup butter
4 skinless, boneless chicken breast halves
seasoned salt to taste
1 (8 ounce) package sliced fresh mushrooms
2 cups heavy cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place a ceramic, glass, or metal mixing bowl into the freezer to chill.
  • Melt the butter in a skillet over medium heat until the foam subsides. Sprinkle the chicken breasts with seasoned salt on both sides, and brown in the melted butter, 5 to 8 minutes per side. Transfer the chicken breasts into a 9x12-inch baking dish. Place the mushrooms in the skillet with the chicken drippings, and cook and stir until the mushrooms have begun to brown, about 10 minutes. Pour the mushrooms and pan drippings over the chicken breasts.
  • Pour the cream into the chilled mixing bowl, and whip on high speed with an electric mixer until the cream is fluffy and forms soft peaks, 1 to 3 minutes. Lightly spoon the whipped cream on top of the chicken breasts.
  • Bake in the preheated oven until the cream is bubbly and the top is golden brown, about 25 minutes.

10 boneless skinless chicken breasts
1 slice butter
1 lb sliced mushrooms
1 pint whipping cream
fresh grated parmesan cheese, to taste
1 (16 ounce) package fettuccine pasta

Steps:

  • Brown chicken breasts for 20 minutes in half of the butter. Saute' mushrooms in the other half. Place chicken in 13x9 baking dish; top with mushrooms. Pour cream over top (save some for fettucine noodles if desired). Sprinkle with parmesan; bake for 30 minutes.
  • Cook fettucine noodles until tender;drain. Pour on remaining cream and melted butter. Add parmesan, salt and pepper to taste.

8 ounces dried spaghetti or 8 ounces linguine
2 cups sliced fresh mushrooms
1/2 cup sliced green onion (4)
2 tablespoons butter or 2 tablespoons margarine
1/4 cup all-purpose flour
1/8 teaspoon black pepper
1/8 teaspoon ground nutmeg
1 1/4 cups chicken broth
1 1/4 cups half-and-half or 1 1/4 cups light cream
2 cups chopped cooked chicken or 2 cups turkey
2 tablespoons dry sherry (optional)
1/4 cup grated parmesan cheese
2 tablespoons snipped fresh parsley (optional)
1/4 cup sliced almonds, toasted (optional)

Steps:

  • Cook spaghetti or linquine according to package directions; drain.
  • Meanwhile, in a large saucepan cook mushrooms and green onions in hot butter or EVOO until tender.
  • Stir in flour, pepper and nutmeg. Add broth and milk all at once. Cook and stir until thickened and bubbly.
  • Stir in chicken, sherry (if using), and half of Parmesan cheese. Add cooked spaghetti; stir gently to coat.
  • Transfer pasta mixture to a 2-quart rectangular baking dish. Sprinkle with the remaining Parmesan cheese and the almonds.
  • Bake in a 350 degree oven, uncovered, for 15 minutes. If desired, sprinkle with parsley before serving.
