1 cup dried great northern beans
2 cups finely chopped onions
2 medium carrots, chopped
1/2 cup sliced fennel bulb or celery
1/4 cup olive oil
4 garlic cloves, minced
3/4 teaspoon crushed red pepper flakes
2 bay leaves
4 cans (14-1/2 ounces each) chicken or vegetable broth
2 cups uncooked bow tie pasta
1/2 cup oil-packed sun-dried tomatoes, chopped
1/4 cup minced fresh parsley
1/2 teaspoon salt
Shredded Parmesan cheese, optional

Steps:

  • Rinse and sort beans; soak according to package directions. Drain and rinse beans; discard liquid and set beans aside., In a Dutch oven, saute onions, carrots and fennel in oil until tender. 1-1/2 cups dried great northern beans
3/4 pound Italian sausage links, casings removed
1 large onion, chopped
1 large carrot, chopped
3 garlic cloves, minced
6 cups chicken broth
3 cups hot water
2 tablespoons dried currants
1 teaspoon dried basil
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup uncooked small shell pasta
Grated Parmesan cheese

Steps:

  • Sort beans and rinse with cold water. Place beans in a Dutch oven or soup kettle; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse beans, discarding liquid., In the same pan, cook the sausage, onion, carrot and garlic over medium heat until the meat is no longer pink; drain. I have been making this recipe for so many years I cannot remember where it came from, but it is my favorite soup in the winter. It is delicious and my entire family loves it.

1 cup dried white bean, rinsed and picked over (such as Great Northern or cannellini)
1/4 cup olive oil
2 cups finely diced yellow onions
2 medium carrots, peeled and diced
1/2 cup diced fennel or 1/2 cup diced celery
4 garlic cloves, minced
3/4 teaspoon dried red pepper flakes
2 bay leaves
8 cups chicken stock
8 ounces bow tie pasta
1/2 cup fine diced sun-dried tomato (use the dry ones and reconstitute them in some hot water for 10 minutes before chopping)
1/4 cup finely diced fresh parsley
freshly grated parmesan cheese

Steps:

  • Soak beans overnight in enough water to cover by 3 inches.
  • Heat oil in a large heavy soup pot over medium heat.
  • Add onions, carrots, fennel, garlic, pepper flakes and bay leaves.

50 g sun-dried tomatoes, cut into small pieces
150 ml water
1 tablespoon olive oil
1 onion, chopped
100 g smoked sausage, diced
2 garlic cloves, chopped
2 fresh tomatoes, diced
800 ml water
40 g pasta shells or 40 g other small shell pasta
200 g borlotti beans, from a can
1 teaspoon sugar
fresh thyme leave
fresh oregano leaves
1/4 teaspoon sea salt
1/2 teaspoon black pepper
40 g parmesan cheese, grated

Steps:

  • Pour 150 ml of water over dried tomatoes and soak for 5 minutes. Drain, but keep the water for further use.

1 16-ounce package dried Great Northern beans (about 2 1/2 cups)
16 cups (or more) water
5 garlic cloves, unpeeled, plus 3 garlic cloves, peeled, chopped
1 celery stalk, cut in half
5 tablespoons olive oil
2 medium onions, chopped (about 3 cups)
1 14 1/2-ounce can diced tomatoes in juice
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh sage
1/2 teaspoon celery salt
3/4 cup tubettini or elbow macaroni (about 6 ounces)

Steps:

  • Place beans in large pot. Add enough cold water to cover beans by 3 inches. Let stand overnight.
  • Drain beans well. Return to pot. Add 16 cups water, 5 unpeeled garlic cloves, and celery stalk. Bring mixture to boil; reduce heat to low and simmer 1 hour 15 minutes, stirring occasionally.
  • Meanwhile, heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add onions and 3 chopped garlic cloves and sauté until golden brown, about 10 minutes. Add tomatoes with juices, rosemary, sage, and celery salt to mixture, stirring to combine.
  • Add vegetable mixture to bean mixture in pot. Simmer soup until beans are tender, about 45 minutes.
  • Cook pasta in another large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain well. Add cooked pasta and remaining 3 tablespoons olive oil to soup, stirring to combine. Thin soup with more water, if desired. Season soup to taste with salt and pepper and serve.
