2 cans white beans, drained and rinsed
2 tablespoons extra virgin olive oil
1 small onion, finely chopped
Salt to taste
2 to 3 large garlic cloves (to taste), green shoots removed, minced
2/3 cup finely grated carrot
3 tablespoons freshly squeezed lemon juice
1/4 cup finely chopped parsley
2 teaspoons minced fresh sage or thyme
1/2 cup fresh bread crumbs
1 egg, beaten
Freshly ground pepper to taste
Whole grain hamburger buns and the condiments of your choice

Steps:

  • Heat 1 tablespoon of the olive oil in a medium-size skillet and add the onion. Cook, stirring, until tender, about 5 minutes. Add a pinch of salt, the garlic and the grated carrot, and continue to cook for another minute or two, until fragrant and the carrot has softened slightly. Remove from the heat.
  • In a food processor fitted with the steel blade, puree the beans with the lemon juice. Transfer to a bowl and stir in the onion mixture, the parsley, sage or thyme, the bread crumbs and the egg. Season to taste. Shape into patties, ½- to ¾-inch thick. Set on a parchment-covered baking sheet and cover with plastic wrap. Refrigerate for 1 to 2 hours.
  • Heat the remaining oil in a large, heavy skillet or on a griddle over medium heat and brown the patties for 4 minutes on each side, being very careful when you turn them over. An offset spatula works well for this. Serve on whole grain buns, with the condiments of your choice.

1 medium sweet potato, roasted, peeled
15 oz white bean, 1 can, drained, rinsed
1 small onion, finely chopped
1 teaspoon garlic powder
1 teaspoon red pepper flakes
⅓ cup nutritional yeast
⅓ cup fresh parsley, finely chopped
1 tablespoon lemon juice
½ cup seasoned bread crumbs
salt, to taste
black pepper, to taste
canola oil
4 tablespoons chipotle mayo
1 red onion, sliced
1 avocado, sliced

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a large bowl, add the roasted sweet potato, white beans, onion, parsley, lemon juice, and seasonings.

1 egg, beaten
1/4 cup yellow cornmeal
2 tablespoons vegetable oil
5 slices (1 ounce each) Monterey Jack cheese
5 whole wheat hamburger buns, toasted
1 1/4 cups shredded lettuce
1/3 cup guacamole
5 tablespoons Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Place beans in food processor or blender. Cover and process until slightly mashed. In medium bowl, mix beans, chiles, onions, bread crumbs and egg. Shape into 5 patties, each about 1/2 inch thick. Coat each patty with cornmeal.

DH said so far, this has been the best meatless burger recipe we have made to date. Instead of using the country Italian bread, we just used hamburger buns. We chopped the parsley. We did not top with the Easy Tomato Sauce.

1 (15 -16 ounce) can cannellini, bean rinsed and drained
1 1/2 cups soft breadcrumbs
1/4 cup shredded carrot
1/4 cup finely chopped onion
1 egg
2 tablespoons snipped fresh parsley
3 tablespoons olive oil
4 slices country Italian bread, toasted (or use hamburger buns)
1 cup packed fresh Baby Spinach
1/4 cup easy tomato sauce
1 ounce diced tomato, undrained
2 tablespoons snipped fresh basil
salt
ground black pepper

Steps:

  • In a medium bowl, mash beans with a fork or potato masher. Stir in half the bread crumbs, the carrot, onion, egg, half of the parsley, 1 Tb olive oil, and 1/4 tsp each salt and pepper. Combine remaining breadcrumbs and parsley in a shallow dish.

1/2 cup canned small white beans, rinsed and drained
3 tablespoons olive oil
1/2 clove garlic, minced
2 tablespoons finely diced red bell pepper
3 tablespoons plain dried breadcrumbs
1 1/2 teaspoon Worcestershire sauce
1 large egg
1 tablespoon thinly sliced chives
1/2 pound ground turkey
Kosher salt and freshly ground black pepper, to taste
8 slices (1/2 inch thick) good country bread (like ciabatta), toasted
