This recipe was shared with us from some dear friends. My husband and her husband served in the same National Guard unit in Utah. We spent a Thanksgiving with them and this was one of the outstanding salads she prepared.

1 (3 ounce) envelope unflavored gelatin
1/4 cup cold water
1/4 cup hot water
1 cup walnuts, chopped
8 ounces cream cheese, softened
1 tablespoon lemon juice
1/2 cup sugar
1 (20 ounce) can sweetened crushed pineapple
8 ounces Cool Whip

Steps:

  • Dissolve gelatin in cold water.
  • Add hot water.
  • Cream the cream cheese, lemon juice and sugar.
  • Drain pineapple. Add to cheese mixture. Stir in gelatin.
  • Add walnuts.
  • Let stand 10 minutes then fold in cool whip.
  • Refrigerate until time to serve.

Can of Pineapple chunks in juice [about 12-14 ounces]
water

Steps:

  • Drain Pineapple juice into a 2 cup measure. [Makes about 1 cup. May add water to make one cup if needed.] Heat juice in microwave. Add jello powder and stir and allow to sit for 2 minutes. Add 1 cup of water to make a total of 2 cups. Pour into refrigerator dish. Refrigerate for about 45 minutes until it has become syrupy consistency on a spoon. Stir in the pineapple. Cover and refrigerate for four hours.
  • Serve.

1 (16.25 ounce) package white cake mix
1 ¼ cups water
⅓ cup vegetable oil
3 egg whites
1 (6 ounce) package pineapple-flavored gelatin mix (such as Jell-O®)
1 cup boiling water
¾ cup cold water
1 (20 ounce) can crushed pineapple, drained
1 (3.5 ounce) package instant vanilla pudding mix
1 (8 ounce) container whipped topping (such as Cool Whip®), thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
