WHITE CHILI W/ROTISSERIE CHICKEN

White Chili W/Rotisserie Chicken image

I threw this together one day when I wasn't in the mood to cook a chicken myself. I'd read a lot of white chili recipes to get ideas but this is what I like. I'm in the habit now of jotting things down as I create them so I can re-make them if they're really good. :)

Tips:

  • Use a whole chicken: Cooking a whole chicken is the best way to get the most flavor in your chili. If you don't have a whole chicken, you can use chicken breasts or thighs, but you'll need to add more spices and seasonings to make up for the lack of flavor.
  • Roast the chicken first: Roasting the chicken before adding it to the chili will help to develop a deeper flavor. You can roast the chicken in the oven or on a grill.
  • Use a variety of beans: Using a variety of beans will give your chili a more complex flavor and texture. Some good options include black beans, pinto beans, kidney beans, and white beans.
  • Add some spice: Chili is typically a spicy dish, so don't be afraid to add some spice to yours. You can use chili powder, cayenne pepper, or even jalapeños.
  • Let the chili simmer: The longer you simmer the chili, the more flavorful it will be. Simmer the chili for at least 30 minutes, or even longer if you have time.
