WHITE TRASH / REDNECK BREAKFAST
Sometime back there was a topic in CC, ( Community Cafe ) about " White Trash/ Redneck Comfort Foods ". I decided to try to come up with a recipe that fit that topic. I think with this recipe it fits the topic very well.Thanks to Kim for Recipe#63684, which the potato part of the recipe is based on. Even if your not " White Trash or Redneck " I think you might like this. Steps:
- Preheat your oven to 450 degrees.
- In a 3 cup bowl with lid, add all the potato ingredients,cover and shake until potatoes are well coated.
- Place on a cookie sheet that has been lined with aluminum foil and sprayed with cooking spray, bake for 25 minutes, stirring once or twice during baking.
- While potatoes are baking, melt margarine in a medium sized skillet add Spam and lightly brown.
- Add flour and cook until " flour taste " is gone about 5 minutes.
- Then add a little milk at a time, stirring until desired thickness is reached ( you might need a little bit more milk ) add salt and pepper to taste.
- Divide potatoes between two plates, and cover with gravy.
WHITE TRASH
My sister-in-law made this at Christmas-time, and everyone loved it! It's very easy to make, and makes a great snack. It also makes a great Christmas goodie to give out to friends and family. I have no idea how it got it's name....

- In a double boiler, melt white chocolate and shortening.
- Stir chocolate mixture until blended and smooth.
- In the meantime, combine all the cereal and nuts in a very large bowl.
- Pour melted white chocolate over the cereal and nuts, gently stirring to coat all pieces.
- Scoop mixture out onto large cookie sheets or jelly roll pans to set.
- After the white chocolate has hardened, break into pieces and store in a large airtight container or Ziploc-type bags.
- Enjoy!

WHITE-TRASH POT ROAST
I don't know why, exactly,when I first receievd this recipe it was called "white-trash" and it certainly isn't an insult. It's simply a really easy way to put dinner on the table, using a crockpot. As a former chemistry student, I know that the acid in the Cola tenderizes the meat, and the caramel coloring in the soda makes your gravy brown. Delicious!

- Cut carrots, potatoes, and onion into stew-size pieces and place in bottom of crockpot.
- Place roast on top. Sprinkle with black pepper (no salt--the onion soup mix contains a lot of salt).
- In bowl, mix soup from can, cola, and onion soup mix with a whisk, to remove lumps. Pour this liquid over roast and veggies.
- Cook on low in a lidded crockpot 6-8 hours or more. Don't take the lid off until you're ready to eat.You can't overcook. Serve atop wide egg noodles or rice.

This is my favorite standard dumpling recipe from the cookbook "White Trash Cooking." This is not a light and fluffy dumpling but more like a noodle, but not really pasta. They hold up well when making homemade chicken and dumplings. This is incredibly easy and I'm still unsure why it works so well but I won't complain.

- Combine flour and salt in a large mixing bowl.
- Boil water and stir in butter until it is melted, too.
- Remove from heat and pour over flour.
- Mix well.
- Roll out into a 1/8th inch sheet and cut into strips or squares with a knife or pizza cutter. You may need to toss with additional flour to prevent sticking to your cutting board or rolling pin.
- Add raw strips or squares of dough to your chicken and dumpling broth (on a low simmer) for about 10 minutes. Stir once or twice gently every five minutes. No more or they might break apart or become gummy and sticky.
