WHOLE GRAIN PUMPKIN SPICE MUFFINS

Whole Grain Pumpkin Spice Muffins image

Mm, we can't get enough of these at our house. It is not a superduper sweet muffin, but a muffin where the flavors of the ingredients come out. And it is just sweet enough to fulfill that certain longing for something sweet. Yet is is pretty low sugar and packed with healthy ingredients. Of course you can omit the raisins or the walnuts, but I think they're perfect as-is. :) My own recipe. I love to tinker with muffin recipes. These have a beautiful crown and a gorgeous color. And of course they make the house smell heavenly when they're baking.

Tips for Making the Best Whole Grain Pumpkin Spice Muffins:

  • Use fresh pumpkin puree. Fresh pumpkin puree will give your muffins the best flavor. To make your own pumpkin puree, simply roast a pumpkin in the oven until it is soft, then scoop out the flesh and puree it in a food processor or blender.
  • Don't overmix the batter. Overmixing the batter will make your muffins tough. Mix just until the ingredients are combined.
  • Use a variety of spices. The combination of spices in this recipe creates a warm and inviting flavor. Feel free to experiment with different spices, such as cinnamon, nutmeg, ginger, and cloves.
  • Let the muffins cool completely before frosting them. This will help the frosting to set properly.

Conclusion:

These whole grain pumpkin spice muffins are a delicious and healthy way to start your day. They are packed with fiber and nutrients, and they have a moist and tender crumb. The pumpkin spice frosting is the perfect finishing touch. Whether you are serving them for breakfast, lunch, or a snack, these muffins are sure to be a hit.
