WHOLE GRILLED CHICKEN WITH LEMON AND GARLIC

Whole Grilled Chicken With Lemon and Garlic image

Absolutely divine. This recipe comes from Weber's Big Book of Grilling, which is our grill bible. Be sure when you truss the bird that you secure the cavity and the neck with a pin of some sort, otherwise the wine and lemon juice will just come right back out when you pour it in. Also, make sure your grill really is at a medium heat, otherwise the skin will char. The prep time listed here includes the time it takes to roast the garlic.

GRILLED ARTICHOKES WITH WHOLE GARLIC BULBS

Grilled Artichokes With Whole Garlic Bulbs image

Provided by Trish Hall

Categories     side dish

Time 50m

Yield 6 servings

Number Of Ingredients 8

6 whole heads of garlic
1 lemon
6 large fresh artichokes
6 tablespoons unsalted butter
1/3 cup olive oil
6 sprigs fresh thyme, or 2 teaspoons dried
Salt to taste
Freshly ground pepper to taste

Steps:

  • Remove papery skin from garlic heads. Slice off top quarter of each head to expose the clove ends, leaving heads whole.
  • Cut lemon in half and squeeze juice into a large bowl filled with water.
  • Cut off the end of stem and top quarter of each artichoke. With scissors, cut off prickly points on the ends of leaves. Quarter artichokes, remove the choke and immediately immerse artichokes in lemon water to keep them from turning brown. Put a plate on top of artichokes to keep them from bobbing to the surface.
  • Cut six sheets of heavy-duty foil about 12 inches square. In each one place a garlic bulb and four artichoke quarters, which have been lifted directly from the water without being drained.
  • Put a tablespoon of butter onto each artichoke, sprinkle with oil and top with a sprig of fresh thyme or 1/3 teaspoon dried thyme. Season with salt and pepper to taste. As if wrapping a gift, pull two sides of the foil together so that they overlap, then roll up the ends of the other two sides so that juices are sealed in.
  • Put foil packets on grill over hot coals and cook for about 40 minutes, turning several times. Serve directly from foil.

GRILLED PORK WITH WHOLE SPICES AND GARLIC BREAD

Grilled Pork With Whole Spices and Garlic Bread image

Deeply flavored from a rub of fennel, coriander, caraway and cumin, and crisp-edged from the grill, this pork feeds a crowd, and most of the work can be done in advance. You can use either boneless loin or shoulder here: The shoulder is chewier, brawnier and more irregular in shape, while the loin is neater to slice and softer to eat. But both are delicious, especially when showered with fresh lemon or lime juice at the end to cut the richness. You don't have to make the buttery garlic bread, but its herbal flavors go well with the smoke and char of the meat. If you do skip it (your loss), serve the pork strewn with plenty of fresh, bright herbs. If you're not grilling, you can roast the pork in a 500-degree oven for 20 to 30 minutes, flipping it halfway. Then run it under the broiler at the end to sear the fat.

Time 40m

Yield 12 to 16 servings

Number Of Ingredients 24

1/4 cup fresh thyme leaves, plus more for serving
4 teaspoons coarse kosher salt
1 tablespoon cumin seeds
1 tablespoon coriander seeds
1 1/2 teaspoons fennel seeds
1 1/2 teaspoons caraway seeds
1 1/2 teaspoons black peppercorns
1/2 teaspoon red-pepper flakes, plus more for serving
12 garlic cloves, finely grated or minced
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons red-wine vinegar
5 to 6 pounds boneless, skinless pork shoulder or loin, butterflied (see Note)
Lemon or lime wedges, for serving
3/4 cup unsalted butter (1 1/2 sticks)
1/2 cup extra-virgin olive oil
1/3 cup finely minced parsley
2 tablespoons chopped fresh basil
5 garlic cloves, finely grated or pounded into a paste
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon freshly ground black pepper
3/4 teaspoon dried oregano
1/4 teaspoon red-wine vinegar
Pinch of red-pepper flakes, plus more to taste
2 (12-inch) loaves French or Italian bread, halved lengthwise

Steps:

  • Prepare the pork: Using a mortar and pestle, pound together the thyme, salt, cumin, coriander, fennel, caraway, peppercorns and red-pepper flakes until the spices are well cracked but not ground. (Or do this in a spice grinder, but take care not to grind the spices.) Add garlic, oil and vinegar, and pound into a paste.
  • Spread paste all over pork, covering the meat thoroughly and evenly. Place the meat on a rimmed baking sheet, cover with plastic wrap or an overturned rimmed baking sheet, and marinate in the refrigerator for at least 6 hours or up to 48 hours (the longer, the better).
  • Prepare the butter for the garlic bread: In a small saucepan, melt the butter with the olive oil. Add the parsley, basil, garlic, salt, pepper, oregano, vinegar and red-pepper flakes, and simmer until fragrant, 1 to 2 minutes. Taste and add more salt if needed. Set aside until ready to grill. If the butter solidifies, place it back on the heat until it liquefies.
  • Heat the grill or light the coals. Lay the pork out on the grill so it is as flat as possible. Cover grill and let the meat cook until char marks appear on one side, 7 to 12 minutes. Use tongs and a large spatula to flip the meat. Continue to grill on the other side until cooked to taste, 135 degrees for medium, about 5 to 12 minutes longer. (It will continue to cook as it rests.)
  • Transfer meat to a cutting board, cover loosely with foil and let rest for at least 10 minutes before slicing.
  • While the pork is resting, grill the garlic bread: Place the halved loaves, cut side down, on the grill, and lightly toast on one side, 1 to 2 minutes. Flip bread and drizzle garlic butter over the toasted side. Let the unbuttered sides of the bread toast, another 1 to 2 minutes. Flip bread and grill once more on the buttered side for about 10 to 20 seconds to sear (take care not to let it burn). Transfer bread to a cutting board and slice into pieces.
  • Carve pork into slices, and squeeze the lemon or lime wedges over the meat. Serve the pork slices garnished with red-pepper flakes and thyme leaves, with the garlic bread on the side.

GRILLED WHOLE FISH IN CHILE, GARLIC AND MINT SAUCE (A KREMEZI)

Grilled Whole Fish in Chile, Garlic and Mint Sauce (A Kremezi) image

While this website has many grilled fish recipes, this recipe uniquely blends the spices and heat of North Afirca and the Middle East. . The source is Aglaia Kremezi's "Mediterranean Hot and Spicy". She credits the recipe to Margaret Tayar's Moroccan-inspired seafood restaurant in Jaffa, near Tel Aviv, Israel. In her restaurant, this is made with sea bream, but any firm, non-oily white-fleshed fish (porgy, gray mullet, flounder, hake, etc.) could be used. While designed for a whole fish on the grill, it can be modified to be done with a grilled fillet. If using fillets, you will need to adjust the cooking time accordingly. This can be served as described or on a bed of rice or couscous. Healthy, wonderfully spiced, delicious, quick -- what more could you want?

Time 1h

Yield 2 fillets, 2 serving(s)

Number Of Ingredients 10

2 -4 fresh green chilies, minced (or to taste)
1 -2 garlic clove, minced (or to taste)
1 teaspoon dried mint, crumbled (OR 3 Tbsp fresh mint, chopped)
2 -3 tablespoons fresh lemon juice (or to taste)
4 -5 tablespoons extra virgin olive oil
1 teaspoon sea salt (or to taste)
1/2 teaspoon ground black pepper (or to taste)
1 1/2 lbs whole sea bream, head on & cleaned
1/2 cup finely diced peeled and seeded tomatoes, drained
2 tablespoons flat leaf parsley, fresh, chopped (garnish)

Steps:

  • Mix together the first 5 ingredients (chiles through olive oil).
  • Season with a little salt, mix, then taste (the sauce should taste hot) and re-season as needed.
  • Set aside at room temperature for 30 minutes to 2 hours for the flavors to marry. (Note: prep time below only includes 30 minutes for this step).
  • Light a charcoal grill or preheat a broiler.
  • Salt the fish inside and out and place on an oiled grill about 5 inches from the heat source. Broil or grill, turning once, until done, about 15 minutes (I use the 10 minutes per inch of maximal thickness rule).
  • Remove from the heat, cover loosely with aluminum foil and let rest for about 5 minutes.
  • Mix the sauce with the chopped tomato.
  • You may serve the fish in one of two ways.
  • Present the fish whole, with the sauce on the side. OR
  • Cut the fish and place the two fillets, skin side down, on a heat-proof platter. Pour half the sauce over the fillets, sprinkle with black pepper and place under a very hot broiler for 15-20 seconds (just enough to warm the sauce). Sprinkle with parsley.
  • Serve the fish (whether whole or as fillets) and pass the sauce (if the fish is left whole) or the remaining sauce (if the fillets are being served) separately.

Tips:

  • To ensure even cooking, select heads of garlic that are similar in size.
  • For a milder flavor, remove the cloves from the garlic head before roasting.
  • Roast the garlic at a high temperature to caramelize the cloves and enhance their flavor.
  • If the cloves start to burn, reduce the oven temperature.
  • Use roasted garlic cloves in a variety of dishes, such as pasta, pizza, dips, and sauces.

Whole roasted garlic is a versatile and flavorful ingredient that can be used in a variety of dishes. With its sweet and savory flavor, roasted garlic adds a delicious depth of flavor to any dish. Whether you're a seasoned chef or a home cook, roasting garlic is an easy and delicious way to enhance your cooking.
