100% whole wheat, these muffins are best fresh out of the oven (of course) but they keep well for at least a week in an airtight container, and are also wonderful split in half and toasted. Based on a recipe from Horn of the Moon cookbook.

Tips:

  • Use ripe dates: Softer dates are easier to blend, resulting in a smoother muffin batter.
  • Soak the dates: Soaking the dates in hot water for 5-10 minutes will plump them up and make them easier to blend.
  • Use unsweetened almond milk: This will help keep the muffins from being too sweet.
  • Don't overmix the batter: Overmixing can make the muffins tough.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This will ensure that the muffins are cooked through.
