WHOLE WHEAT ZUCCHINI BREAD

I took an old favorite and juiced it up by cutting the white sugar completely, replacing with honey and brown sugar to reduce the total sweetener by half. I also cut the oil back to 25 percent and introduced one-third whole wheat flour. The results are in; it's even better than the original! I like to use the huge zucchini that didn't get picked on time, as long as it's still green and healthy. This is a large batch recipe, but you can easily cut it in half.

WHOLE WHEAT ZUCCHINI HERB BREAD-BREAD MACHINE

Whole Wheat Zucchini Herb Bread-Bread Machine image

This is a very good whole wheat zucchini yeast bread. The zucchini blends right into the dough, providing half of the moisture and subtle flavor. The bread is so light that a 1 1/2 pound loaf recipe will be the same size as a 2 pound loaf. We love this bread. Enjoy.

This is a zucchini bread made only with whole wheat flour, I'm sure you could make it 1/2 with whole wheat flour and 1/2 with all purpose. It is really easy and delicious! It turns out quite sweet with 1 1/2 cups of sugar so if you're trying to cut back on sugar I think only 1 cup would be enough --> this recipe makes 2 loaves

ZUCCHINI HERB BREAD

zucchini herb bread image

this bread is very light and the moisture from the zucchini makes the dough rise to the size of a 2 lb loaf

Provided by chia2160

Categories     Yeast Breads

Time 3h15m

Yield 1 1/2 lb loaf

Number Of Ingredients 10

3/4 cup water
1 tablespoon honey
1 1/2 tablespoons oil
1 cup shredded zucchini (4 oz)
1 cup whole wheat flour
2 1/2 cups bread flour
1/2 teaspoon dried rosemary
1 tablespoon sesame seeds
1 teaspoon salt
2 teaspoons yeast

Steps:

  • add all ingredients to bread machine in this order.
  • cook on basic cycle.

Tips:

  • For a moist and flavorful bread, use fresh zucchini. If you don't have fresh zucchini on hand, you can use frozen zucchini that has been thawed and squeezed dry.
  • Grate the zucchini on the large holes of a box grater. This will help to release the zucchini's moisture and prevent the bread from becoming too dense.
  • Be sure to measure your flour correctly. Too much flour can make the bread dry and crumbly.
  • Don't overmix the batter. Overmixing can develop the gluten in the flour, which can also make the bread tough.
  • Bake the bread until a toothpick inserted into the center comes out clean. Overbaking can dry out the bread.
  • Let the bread cool completely before slicing and serving. This will help to prevent the bread from crumbling.

Conclusion:

Whole wheat zucchini herb bread is a delicious and healthy quick bread that is perfect for breakfast, lunch, or a snack. It's easy to make and can be customized to your liking. Try adding different herbs, cheeses, or nuts to create a unique and flavorful bread that your family and friends will love. With its moist texture, sweet flavor, and the goodness of whole wheat flour and zucchini, this bread is a winner.
