Time 1h

Yield 4 serving(s)

Number Of Ingredients 10

2 teaspoons butter
3 teaspoons all-purpose flour
4 cups milk
3/4 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon cayenne pepper
1 (10 ounce) package chopped frozen broccoli, thawed, drained
1/2 cup finely chopped red bell pepper
6 ounces sharp cheddar cheese or 6 ounces extra-sharp cheddar cheese, shredded
2 teaspoons chopped chives or 2 teaspoons chopped green onion tops

Steps:

  • Melt butter in a large saucepan over medium heat.
  • Add flour; cook and stir 30 seconds or until bubbly.
  • Add milk, salt, mustard, and cayenne pepper; bring to a simmer over high heat, stirring frequently.
  • Add broccoli and red pepper; return to a boil.
  • Reduce heat to low; simmer uncovered 5 minutes, stirring occasionally.
  • Add cheese; stir over low heat just until cheese melts (do not boil).
  • Ladle into four soup bowls; top with chives.

Tips:

  • Mise en Place: Before you start cooking, measure and prepare all your ingredients. This will make the cooking process much smoother and less stressful.
  • Use Good Quality Ingredients: The better the quality of your ingredients, the better your soup will be. Use fresh vegetables, a sharp cheddar cheese, and a good quality chicken broth.
  • Don't Overcook the Vegetables: The vegetables should be tender but still have a little bit of crunch to them. Overcooked vegetables will be mushy and ruin the texture of your soup.
  • Use a Good Quality Blender: A good quality blender will help you get a smooth and creamy soup. If you don't have a blender, you can use an immersion blender.
  • Season to Taste: Season your soup with salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika, to taste.
  • Serve with Cheddar Cheese Balls: Cheddar cheese balls are the perfect accompaniment to Wisconsin cheddar cheese soup. They're crispy on the outside and gooey on the inside, and they're sure to be a hit with everyone.

Conclusion:

Wisconsin cheddar cheese soup is a delicious and hearty soup that's perfect for a cold winter day. It's easy to make and can be tailored to your own taste preferences. Serve it with cheddar cheese balls for a truly special meal.
