6.4 oz Apple (red) (1 medium apple)
6.2 oz Pear (1 medium pear)
2.35 oz Carrot (1 medium carrot)
0.55 oz Lemon (1/8 medium lemon)
0.2 oz Ginger (2 slices (1 inch diameter))
0.5 oz Ground Cinnamon (1 tablespoon (reduce to 1/2 teaspoon if you don't have a juice press machine))
0.166 oz Ground Nutmeg (1 teaspoon (reduce to 1/8 teaspoon if you don't have a juice press machine))

It was surprisingly delicious and is the best recipe I've ever seen for pumpkin juice. This works well with spiced rum if you've got an interest in a bit of an adult twist.

2 quarts apple cider, divided
1 (2 inch) piece fresh ginger, sliced
1 cinnamon stick
½ teaspoon whole cloves
½ cup brown sugar
¼ cup honey
1 (28 ounce) can pumpkin puree

Steps:

  • Stir 3 cups apple cider, ginger, cinnamon stick, and cloves together in a saucepan; bring to a boil, reduce heat to low, and simmer until slightly reduced, about 15 minutes.
  • Remove saucepan from heat and immediately stir brown sugar and honey into the cider mixture until dissolved into the liquid.
  • Pour the liquid into a wide glass dish and refrigerate until chilled completely, at least 45 minutes.

30 oz water
1 cup sugar
1 cup water
4 whole cinnamon sticks
3 whole nutmeg pods, split in half
¾ cup apricot juice
¾ cup apple juice
1 tablespoon lime juice
1 teaspoon freshly grated nutmeg
1 teaspoon freshly grated cinnamon

Steps:

  • Make the pumpkin juice: In a medium pot, combine the pumpkin purée and water. Bring to a boil over medium-high heat, then remove the pot from the heat.
