WOLFGANG PUCK RED VELVET CAKE WAFFLES
I slightly modified it but these made the coolest waffles EVER. These are perfect for Valentine's Day, especially if you have one of those old school heart-shaped waffle irons! I skipped the red food dye because I had nowhere near enough but they still tasted fantastic.

Steps:
- Let the cream of tartar sit in the milk for at least 5 minutes to make the buttermilk. If using real buttermilk, skip this step. Vanilla or chocolate soymilk is also nice to use!
- Whisk the sugar, egg whites, applesauce, and oil with the buttermilk in a large mixing bowl.
- Gradually whisk in 1 cup of flour in 1/4 cup or 1/3 cup increments.
- When 1 cup has been blended, whisk in the vanilla, salt, baking powder, and cocoa powder. If using red food dye, add it now too.
- Whisk in the remaining cup of flour in the same fashion.
- Coat a waffle iron with non-stick cooking spray.
- Pour 1/2 cup of batter onto the waffle iron and cook until nicely browned, scraping off with a spatula.
- Good with maple syrup but utterly to die for with a little chocolate syrup, powdered sugar, and strawberries! Makes about 10-14 delicious out-of-this-world waffles.

Steps:
- Combine yolks, milk, sugar, flour, salt, buttering bowl and beat/mix until smooth. Bring egg whites to hard peaks. Fold in baking powder. Mix all. Add 1cup to waffle maker
Tips:
- Use Fresh, High-Quality Ingredients: For the best waffles, start with fresh, high-quality ingredients. This includes fresh eggs, buttermilk, and good-quality flour.
- Don't Overmix the Batter: Overmixing the batter can result in tough waffles. Mix just until the ingredients are combined.
- Let the Batter Rest: Allowing the batter to rest for a few minutes before cooking gives the gluten time to relax, resulting in lighter, fluffier waffles.
- Preheat the Waffle Iron: Make sure your waffle iron is preheated before you start cooking. This will help ensure that the waffles cook evenly.
- Don't Crowd the Waffle Iron: Don't overcrowd the waffle iron with too much batter. This will result in waffles that are not cooked evenly.
- Cook the Waffles Until Golden Brown: Cook the waffles until they are golden brown and crispy on the outside. This will ensure that they are cooked through.
- Serve the Waffles Immediately: Waffles are best served immediately after they are cooked. This will ensure that they are hot and crispy.
