WORKING MOM'S LAYERED NACHOS

Working Mom's Layered Nachos image

A quick, easy and somewhat healthy dinner fix for anytime you need to get dinner on the table quickly and keep 'em happy! Can even be a great appetizer or dip for a party. ;) I use this often and it keeps everyone asking for it over and over. Black olives are a great addition for a dip- or if your family will eat them - I use them off and on depending on if I have them in the house!

Super Easy Working Mom's Manicotti image

A twist on the super easy recipe my closest girlfriend Jules35 and I use from the back of the AMERICAN BEAUTY PASTA (THE ONLY ONE THAT SHOWS A RECIPE THAT YOU DON'T HAVE TO BOIL THE PASTA FIRST!! Sometimes we make it with sausage and mushrooms, sometimes veggie style-either way is great! Their make ahead tip is below as well! We have made this with a single can of sauce (large) but if you want it really saucy, you may want to adjust the recipe later to suit your tastes. ;) I topped with a 4 cheese blend that had cheddar in it for the picture. Up to you!!

COPYCAT TRIPLE LAYER NACHOS

Copycat Triple Layer Nachos image

Last week at work there was some chatter about how it had been a year since Taco Bell® took the Triple Layer Nachos off their menu and how they were missed. I set out on a mission and this is what I came up with. Note: the restaurant chain sells their own line of refried beans, queso, and sauce so that makes it all the more easy to recreate this at home. This will dirty 4 pans but it is so worth it!

¼ cup water
½ (15.5 ounce) jar prepared salsa con queso

½ cup vegetable oil
12 (6 inch) white corn tortillas, cut into chips
salt to taste

Steps:

  • Line a plate with paper towels.
  • Combine refried beans and 1/4 cup water in a small saucepan over low heat.
  • Combine salsa con queso and 2 tablespoons of water in a second saucepan and heat over low heat.
  • Combine enchilada sauce and mild sauce in a third saucepan and heat over low heat.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better your nachos will taste. This means using ripe avocados, fresh cilantro, and crisp tortilla chips.
  • Layer your nachos carefully: The order in which you layer your nachos is important. Start with a layer of tortilla chips, then add a layer of cheese, followed by your toppings. Repeat this process until you have a stack of nachos that is as tall as you want it to be.
  • Don't be afraid to experiment: There are endless possibilities when it comes to nacho toppings. Get creative and experiment with different flavors and textures. Some popular nacho toppings include:
    • Ground beef or chicken
    • Black beans or corn
    • Bell peppers or onions
    • Sour cream or guacamole
    • Salsa or pico de gallo
  • Serve your nachos immediately: Nachos are best when they are served immediately after they are made. This prevents the tortilla chips from getting soggy.

Conclusion:

Layered nachos are a delicious and easy-to-make party food that can be enjoyed by people of all ages. With a few simple ingredients and a little bit of creativity, you can create a nacho platter that is sure to be a hit. So next time you're looking for a quick and easy snack or party food, give layered nachos a try. You won't be disappointed!
