TRADITIONAL BRUNSWICK STEW
Folks moving to this part of the country (Georgia) often fall in love with Brunswick Stew, usually a side dish at barbecue restaurants. This version is delicious but simple to make. People feud over whether the stew should have potatoes and lima beans in it, but this is a purist stew (except for the sneaky addition of potato flakes).

Tips for Making Brunswick Stew:
- Choose the right meat. Traditionally, Brunswick stew is made with squirrel, rabbit, or chicken. However, you can also use beef, pork, or lamb. If you're using game meat, be sure to soak it in buttermilk or vinegar overnight to remove any gaminess.
- Use fresh vegetables. The vegetables in Brunswick stew should be fresh and flavorful. Avoid using frozen or canned vegetables whenever possible.
- Don't overcook the vegetables. The vegetables in Brunswick stew should be cooked until they're tender, but not mushy. Overcooked vegetables will lose their flavor and texture.
- Use a good quality stock. The stock you use in Brunswick stew will make a big difference in the flavor of the dish. Use a homemade stock if you can, or a good quality store-bought stock.
- Season the stew well. Brunswick stew should be well-seasoned with salt, pepper, and other spices. Don't be afraid to taste the stew as it's cooking and adjust the seasonings as needed.
- Let the stew simmer. Brunswick stew is a slow-cooked dish that benefits from simmering for several hours. The longer the stew simmers, the more flavorful it will be.
Conclusion:
Brunswick stew is a delicious and hearty dish that's perfect for a cold winter day. It's also a great way to use up leftover meat and vegetables. With a little planning and effort, you can make a Brunswick stew that your family and friends will love.
