Provided by Parrot Head Mama

Categories     Lunch/Snacks

Time 25m

Yield 4 serving(s)

Number Of Ingredients 8

1 lb raw eggplant, sliced crosswise on the diagonal and into 1/2-inch thick pieces
cooking spray
2 tablespoons low sodium soy sauce
1 tablespoon fresh lemon juice
1 1/2 teaspoons rice wine vinegar
1 teaspoon ginger, freshly grated
1/4 teaspoon minced garlic
1/4 cup scallion, thinly sliced

Steps:

  • Preheat outdoor grill or broiler.
  • Coat eggplant with cooking spray.
  • Grill or broil eggplant, turning as needed, until lightly charred and tender (about 7-9 minutes).
  • Whisk together soy sauce, lemon juice, vinegar, ginger, and garlic in small bowl until well blended.
  • Drizzle over grilled eggplant and then sprinkle with scallions.
  • Points/yield figured on 3/4 cup per serving.

Tips:

  • Choose the right mushrooms. Large, firm mushrooms with intact stems work best for stuffing. White button mushrooms, cremini mushrooms, and portobello mushrooms are all good options.
  • Clean the mushrooms thoroughly. Use a damp paper towel to wipe away any dirt or debris from the mushrooms. Be careful not to rinse the mushrooms with water, as this can make them soggy.
  • Stuff the mushrooms evenly. Don't overstuff the mushrooms, or they will be difficult to close. Use a spoon or your fingers to evenly distribute the stuffing mixture among the mushrooms.
  • Bake the mushrooms until they are tender. The mushrooms should be cooked through but still slightly firm. Depending on the size of the mushrooms, this will take about 20-30 minutes.
  • Serve the mushrooms immediately. Stuffed mushrooms are best served hot out of the oven. You can garnish them with fresh herbs, such as parsley or chives, before serving.

Conclusion:

Stuffed mushrooms are a delicious and versatile appetizer or side dish. They can be made with a variety of ingredients, so you can easily customize them to your liking. Whether you prefer a classic Cajun-style stuffing or something more unique, you're sure to find a stuffed mushroom recipe that you'll love.
