3 cups water
1 ½ cups jasmine rice
1 tablespoon peanut oil, or more to taste
1 tablespoon red curry paste
1 teaspoon grated fresh ginger
1 clove garlic, minced
½ (14 ounce) can light coconut milk
¼ teaspoon cayenne pepper, or more to taste
¼ teaspoon paprika, or more to taste
¼ teaspoon ground cumin, or more to taste
¼ teaspoon salt
1 skinless, boneless chicken breast half, cut into cubes
½ cup chicken stock
½ sweet onion, diced
¼ green bell pepper, diced
¼ yellow bell pepper, diced
¼ red bell pepper, diced
1 carrot, diced
3 tablespoons fish sauce
2 tablespoons brown sugar
1 tablespoon yellow curry powder
1 bay leaf
½ cup frozen peas

Steps:

1 recipe Lemongrass Paste
1 teaspoon coarse salt
Pinch of ground cloves
1 Idaho potato (about 8 ounces)
1 pound boneless, skinless chicken breasts (about 4 breasts)
1 tablespoon cornstarch
1 tablespoon extra-virgin olive oil
1 onion, cut into 1/2-inch slices
3 cloves garlic, sliced
2 carrots, peeled, cut in 1/4-inch-thick rounds
1/4 cup low-fat canned coconut milk
1/2 cup water
2 cups homemade or low-sodium canned chicken stock, skimmed of fat
2 tablespoons chopped fresh cilantro
Chopped peanuts (optional)
Crushed red-pepper flakes (optional)
