Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 10

1 onion, peeled and cut into chunks
1 carrot, peeled and cut into chunks
1 stalk celery, cut into chunks
1 clove garlic, peeled
2 to 3 tablespoons vegetable oil
1/2 teaspoon ground mace
2 1/4 cups (1 pound) yellow split peas, rinsed
4 cups chicken or vegetable stock (may be made from concentrate), more as needed
2 bay leaves
Approximately 8 frankfurters, cut into 1-inch pieces

Steps:

  • In a food processor, combine onion, carrot, celery and garlic. Process until finely chopped.
  • Place a heavy, wide saucepan over medium heat, and add oil. When hot, add chopped vegetables, and sauté until soft but not colored, 5 to 10 minutes. Stir in mace. Add split peas, and stir to mix well.
  • Add 4 cups stock and the bay leaves, and bring to a boil. Cover, and reduce heat to low. Simmer until peas are very soft, about 1 hour. Stir soup with a wooden spoon. If desired, adjust thickness of soup with additional stock.
  • Add frankfurter pieces to soup, and simmer until well heated. Ladle into bowls and serve. (Alternatively, soup may be ladled into bowls and frankfurter pieces heated in a microwave oven, and added to each bowl as desired.)

Tips:

  • Soak the split peas: Soaking the split peas overnight or for at least 4 hours will help them cook more evenly and quickly. You can also use a quick-soak method by boiling the peas for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a variety of vegetables: This soup is a great way to use up leftover vegetables. You can add any vegetables you like, such as carrots, celery, onions, potatoes, or zucchini.
  • Add some herbs and spices: Herbs and spices can help to add flavor and depth to the soup. Some good choices include bay leaves, thyme, parsley, garlic, and black pepper.
  • Don't overcook the split peas: Split peas can become mushy if they are overcooked. Cook them just until they are tender, which will usually take about 1 hour.
  • Serve with your favorite toppings: This soup is delicious served with a variety of toppings, such as sour cream, croutons, chopped bacon, or grated cheese.

Conclusion:

Yellow split pea and frankfurter soup is a classic comfort food that is easy to make and always a hit. This soup is made with a variety of vegetables, herbs, and spices, and it is simmered until the split peas are tender and the flavors have melded together.
