" YOU BRING THE MACARONI SALAD," MACARONI SALAD

Whenever we go somewhere for a back yard BBQ, I am asked to bring my macaroni salad. I think the "secret" that makes this macaroni salad different from others is the mixture of miracle whip and mayo. You know, some people like mayo...some like miracle whip. This way, everybody is "half" pleased!! This is another one of my "throw together" recipes, so I have tried my best to give some type of measurements.

Time 20m

Yield 8-10 serving(s)

Number Of Ingredients 8

1 (16 ounce) box small shell pasta, cooked and drained
1/2 cup mayonnaise
1/2 cup Miracle Whip
1 small sweet onion, diced into small pieces
4 hard-boiled eggs, chopped
1 tablespoon sweet pickle juice
1 tablespoon sugar
colby cheese or monterey jack cheese, diced into small bite sized pieces

Steps:

  • NOTE: The measurements on the miracle whip, mayonnaise, pickle juice and sugar can be adjusted to your taste.
  • Honestly, I never measure "exactly.".
  • Also, use as much or as little cheese as you would like.
  • Cook macaroni according to directions.
  • When draining, run cold water over to keep it from sticking together and to "chill" it.
  • Mix mayonnaise, miracle whip, onion, pickle juice and sugar together to make "sauce.".
  • After macaroni is completely drained, mix macaroni, "sauce", eggs and cheese until everything is coated and mixed well.
  • The longer it chills, the better it gets!

OLD-FASHIONED MACARONI SALAD

Time 2h35m

Yield 4 to 6 servings

Number Of Ingredients 11

4 eggs
1 pound large elbow macaroni
4 ounces ham steak, finely chopped
2 stalks chopped celery, including leaves
1 large shallot, chopped
2 tablespoons fresh lemon juice
2/3 cup mayonnaise
2 tablespoons Dijon mustard
1 (4-ounce) jar chopped pimentos, drained
3 tablespoons sweet pickled relish
Kosher salt and pepper

Steps:

  • To make the hard-boiled eggs: Add the eggs to a medium-sized saucepan. Cover with cold water and bring up to a boil over medium heat. Cover with a lid and turn off the heat. Let the eggs sit in the hot water for 14 minutes. Drain and cool under cold running water. Peel the eggs and chop. Reserve.
  • While the eggs are cooking, bring a large pot of salted water to a boil over high heat and add the macaroni. Cook until al dente. Drain and rinse with cold water.
  • In a large serving bowl, combine the eggs, ham steak, celery, shallots and lemon juice Add the macaroni and stir to combine.
  • In a separate bowl, whisk together the mayonnaise, mustard, pickled relish, and salt and pepper, to taste. Add the dressing to the macaroni and toss to coat. Season with more salt and pepper, if needed. Cover and chill for 2 hours for the flavors to meld.

Tips:

  • Choose the right pasta: Short, sturdy pasta shapes like elbows or shells are ideal for macaroni salad because they can hold up to the dressing and other ingredients without getting mushy.
  • Cook the pasta al dente: This means cooking it until it is just tender, but still has a slight bite to it. Overcooked pasta will be mushy and absorb too much dressing.
  • Rinse the pasta with cold water: This will stop the cooking process and help to prevent the pasta from sticking together.
  • Use a flavorful dressing: The dressing is what really makes macaroni salad shine. A classic mayonnaise-based dressing is always a good choice, but you can also try a vinaigrette or a creamy dressing made with sour cream or yogurt.
  • Add a variety of vegetables and other ingredients: Macaroni salad is a great way to use up leftover vegetables. Some popular additions include celery, carrots, onions, bell peppers, and cucumbers. You can also add hard-boiled eggs, cheese, or even cooked chicken or ham.
  • Chill the macaroni salad before serving: This will help the flavors to meld and make the salad more refreshing.

Conclusion:

Macaroni salad is a classic summer side dish that is easy to make and always a crowd-pleaser. With its simple ingredients and endless variations, it's a dish that everyone can enjoy. So next time you're looking for a quick and easy side dish, give macaroni salad a try!
