1 tablespoon vegetable oil
2- 1 1/2"-thick bone-in pork rib chops (8-10 ounces each)
Kosher salt, freshly ground pepper
freshly ground pepper
8 sprigs sage
2 garlic cloves, peeled, smashed
1 tablespoon unsalted butter

Steps:

  • Heat oil in a large skillet over mediumhigh. Season pork chops all over (including the fat cap) with salt and pepper. Cook pork chops until bottom side is golden brown, about 1 minute. Turn and cook on other side about 1 minute before turning again. Repeat this process, turning about every minute, until chops are deep golden brown and an instant-read thermometer inserted into the thickest part registers 135°, 8-10 minutes (cooking time will depend on thickness of chops).
  • Remove pan from heat and add sage, garlic, and butter, smashing garlic into butter. Tilt skillet and spoon foaming butter and drippings over pork chops, making sure to baste the fat cap as well as the rib. Transfer pork chops to a cutting board and let rest at least 5 minutes (pork will come to 145° as it sits).
  • Cut away bone and slice pork about 1/4" thick. Serve with any juices from the cutting board spooned over top.

2 cups soy sauce
1 cup water
1/2 cup packed brown sugar
1 tablespoon molasses
6 bone-in pork loin chops (1-1/2 inches thick)
SAUCE:
3/4 cup ketchup
2/3 cup chili sauce
1/4 cup packed brown sugar
2 tablespoons water
1-1/2 teaspoons ground mustard

Steps:

  • In a saucepan over medium heat, bring soy sauce, water, brown sugar and molasses to a boil. Remove from the heat; cool to room temperature. pour into a large resealable plastic bag; add pork chops. Seal bag and refrigerate for 3-6 hours., Drain and discard marinade. Place pork chops in a greased 13-in. x 9-in. baking dish. Cover and bake at 350° for 30 minutes. Combine the sauce ingredients; pour over chops. Bake, uncovered, 30 minutes longer or until meat juices run clear.

¼ cup diced green pepper
¼ cup packed brown sugar
4 teaspoons chopped onion
½ teaspoon ground ginger
2 garlic clove (blank)s garlic cloves, minced
4 each pork loin chops, 1 inch thick
2 teaspoons sugar
2 teaspoons cornstarch
½ cup water

Steps:

  • In a blender, combine the soy sauce, green pepper, brown sugar, onion, ginger and garlic; cover and process until smooth. Set aside 2 tablespoons for sauce. Pour the remaining marinade into a large resealable plastic bag or shallow glass container. Add pork chops and turn to coat. Seal or cover and refrigerate for 8 hours or overnight; drain and discard marinade. Grill chops, covered, over medium-hot heat for 5-8 minutes on each side or until a meat thermometer reads 145 degrees (63 degrees C). 1/3 cup reduced sodium soy sauce
1/4 cup olive oil
2 teaspoons minced fresh rosemary
2 green onions, sliced
4 thick-cut boneless center cut pork chops
