Yucca Hash Browns with Bacon, Onion and Lime-Cilantro Mojo image

Provided by Bobby Flay | Bio & Top Recipes

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 15

1/4 cup fresh lime juice
2 tablespoons finely chopped fresh cilantro leaves
2 tablespoons aged sherry vinegar
1/2 teaspoon clover honey
2 cloves garlic, finely chopped
1/4 to 1/2 half small habanero chile, diced
Kosher salt and freshly ground black pepper
1 1/2 pounds yucca, washed, peeled and cut into 3/4-inchdice
1 bay leaf
1/2 head garlic
Kosher salt and freshly ground black pepper
2 to 4 tablespoons canola oil
12 ounces slab bacon, diced
2 teaspoons ground cumin
1 small Spanish onion, diced

Steps:

  • For the mojo: Stir together the lime juice, cilantro, vinegar, honey, garlic, chiles and some salt and black pepper in a small bowl and let sit at room temperature while you prepare the hash, to allow the flavors to meld.
  • For the yucca hash: Put the yucca, bay leaf and garlic in a large saucepan and cover with cold water by 2 inches. Sprinkle the water with salt and black pepper. Bring the water to a boil, and then reduce the heat to a simmer. Cook the yucca until just tender, but not falling apart. Drain well in a colander, then transfer to a paper-towel-lined baking sheet to drain again. Discard the garlic and bay leaf.
  • Heat a large cast-iron pan or griddle over medium-high heat. Add the oil and bacon and cook until the fat is rendered and the bacon is crisp. Remove with a slotted spoon to a paper-towel-lined plate. Add the cumin and onions and cook until soft, about 4 minutes. Add the yucca and cooked bacon and season with salt and pepper. Cook the hash, pressing with a spatula, until the bottom is crisp and dark brown. Turn the yucca pieces using a spatula and repeat pressing and browning until brown and crisp on all sides. Transfer to a platter and drizzle with the lime-cilantro mojo.

YUCCA BUNS (PAN DE YUCCA)

Provided by Ingrid Hoffmann

Categories     side-dish

Time 40m

Yield 10 buns

Number Of Ingredients 12

Nonstick cooking spray
1 cup tapioca flour, plus extra for kneading
1 teaspoon baking powder
2 cups Oaxaca cheese or other fresh white cheese, such as mozzarella, finely grated
2 large egg yolks
2 to 3 tablespoons heavy cream, if necessary
Pineapple Jalapeno Marmalade, recipe follows
1 (20-ounce) can crushed pineapple in juice, strained
4 cups sugar
1 orange, zested and juiced
1 lemon, zested and juiced
2 jalapenos, seeded and minced

Steps:

  • Preheat the oven to 350 degrees F. Line a baking pan with aluminum foil, and coat with nonstick cooking spray. Set aside.
  • Combine the tapioca flour and baking powder together in a large bowl. Stir in the cheese and egg yolks. Mix until the dough forms a ball. Lightly flour a work surface and turn the dough out. Knead the dough with your hands until the dough is smooth, even-textured, and not sticky. If the dough doesn't come together or seems too stiff, then add cream, 1 tablespoon at a time, until it comes together and feels supple.
  • Divide the dough into 10 even pieces and with your hands, roll each into a ball. Shape the balls into ovals and place them 1-inch apart on the prepared baking sheet. Bake until the rolls are pale gold (not browned), about 15 to 20 minutes. Cool on a wire rack for 5 to 10 minutes and serve while still warm. Serve with Pineapple Marmalade, if desired.
  • Combine the pineapple, sugar, orange zest, orange juice, lemon zest, lemon juice and jalapenos in medium saucepan.
  • Bring mixture to a rapid boil over high heat, stirring frequently. Lower heat to medium and continue to cook for 15 minutes, stirring often to prevent scorching.
  • Remove from heat and cool before serving.
  • Store in refrigerator for up to 1 month or in the freezer for 6 months.

YUCCA FLATS

Yucca Flats image

This drink has been in the family for years. Its great for parties with large groups of people and the alcohol content can be adjusted for your tastes. "Yucca Flats" is supposedly where they first started testing the nuclear bomb (I have no confirmation of this, only that which my father tells me). Its my mom's favorite drink. It tastes like fruit juice, and doesn't leave a hangover if you don't mix it with other drinks. It does sneak up on you though so drink gingerly. Oh and the original recipe came from a "men's group of travellers", who were drunk at the time, so feel free to use the original "baby bath tub for the container and mix with your feet" instructions) I also have no guarentee of serving size, it depends on too many factors.

Time 5m

Yield 5-10 serving(s)

Number Of Ingredients 7

26 ounces tequila (good stuff, small or medium sized bottle)
26 ounces rum (I use amber, small or medium sized bottle)
6 lemons, squeezed and tossed in
6 oranges, squeezed and tossed in
355 ml pink lemonade
ice
Sprite or champagne

Steps:

  • Mix all well. The rinds will soak up the alcohol over time. Depending on who's drinking I will use with small or medium sized bottles but they must be of equal size.
  • I also traditionally use sprite as my mixer just for the gentle fizz.
