I created this recipe for my lovely husband (who I call Seets) after looking at several other recipes and not finding any that were close to what his Grandmother makes. He loves these, and hopefully you do too.

Time 35m

Yield 6 serving(s)

Number Of Ingredients 7

2 (15 ounce) cans yams or 2 (15 ounce) cans sweet potatoes
1 tablespoon margarine
5 1/4 ounces miniature marshmallows (more or less to taste)
1/4 cup orange juice
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat the oven to 350 degrees.
  • Drain the yams.
  • In a shallow baking dish mash one can of yams and leave the other can of yams in pieces (This is more of a personal preferance, you can leave both cans in pieces if you wish).
  • Pour orange juice over the yams.
  • Sprinkle on brown sugar and cinnamon.
  • Dot with butter or margarine.
  • Top the yams with marshmallows.
  • Bake 30 minutes or until marshmallows have melted.
  • Be sure to watch the yams the last 5 minutes because the marshmellows can burn.

Tips:

  • Choose the right yams: Look for firm, smooth yams with no blemishes or bruises. Avoid yams that are soft or have any signs of spoilage.
  • Peel and cut the yams evenly: This will help them cook evenly. Cut the yams into 1-inch thick slices or 2-inch long pieces.
  • Soak the yams in water: This will help to remove some of the starch and make them less likely to stick together. Soak the yams in cold water for at least 30 minutes before cooking.
  • Use a heavy pot or Dutch oven: This will help to evenly distribute the heat and prevent the yams from burning.
  • Add plenty of water: The yams should be covered with water by at least 1 inch. If the water evaporates during cooking, add more as needed.
  • Bring the water to a boil, then reduce heat and simmer: This will help to cook the yams evenly without overcooking them. Simmer the yams for 15-20 minutes, or until they are tender.
  • Drain the yams and return them to the pot: This will help to remove any excess water and make it easier to coat the yams with the glaze.
  • Add the glaze ingredients to the pot and stir to coat the yams: The glaze should be thick enough to coat the yams evenly. If the glaze is too thin, add more brown sugar or cornstarch. If the glaze is too thick, add more orange juice or water.
  • Bring the glaze to a boil, then reduce heat and simmer: This will help to thicken the glaze and caramelize the yams. Simmer the yams in the glaze for 5-10 minutes, or until the glaze is thick and syrupy.
  • Serve the yams hot: Candied yams are best served immediately after they are made. They can be served as a side dish or as a dessert.

Conclusion:

Candied yams are a delicious and easy-to-make side dish that is perfect for any occasion. They can be made with just a few simple ingredients and are sure to be a hit with everyone at your table. So next time you are looking for a delicious and festive side dish, give candied yams a try!
