2 cups meatless spaghetti sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1/3 cup finely shredded zucchini
1/4 cup finely shredded carrot
1/2 teaspoon Italian seasoning
1 package (12.3 ounces) silken firm tofu
1 cup 1% cottage cheese
1 cup shredded part-skim mozzarella cheese
1 tablespoon grated Parmesan cheese
10 uncooked manicotti shells

Steps:

  • Combine the spaghetti sauce, tomatoes, zucchini, carrot and Italian seasoning; spread 3/4 cup into a 13x9-in. baking dish coated with cooking spray. , Combine the tofu and cheeses; stuff into uncooked manicotti shells. Place over spaghetti sauce; top with remaining sauce. , Cover and bake at 375° for 50-55 minutes or until noodles are tender. Let stand for 5 minutes before serving.

1 (16 ounce) package of 12 manicotti (Large pasta tubes)
1 (16 ounce) package tofu
1 egg
1/4 cup nutritional yeast
1 teaspoon salt
1 teaspoon oregano
1 teaspoon basil
1 tablespoon dried onion
1/4 teaspoon black pepper
1/2 teaspoon garlic salt
1/2 cup finely chopped fresh spinach
2 tablespoons finely chopped fresh parsley
1 (32 ounce) jar pasta sauce, I like Newman's Marinara with Mushrooms
8 ounces shredded mozzarella cheese
1/4 cup freshly grated parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Boil a large pot of water and cook manicotti 6 minutes, or until slightly soft. Drain and set aside.
  • Crumble the tofu while pasta is cooking. Add remaining ingredients to tofu, except for the pasta sauce and the cheese. Stir until blended.
  • Stuff each pasta shell with the tofu mixture.
  • Pour half the pasta sauce into a 13" x 9" pan.
  • Fill manicotti with the filling using a small spoon, or a pastry tube.
  • Put the rest of the sauce on top of the manicotti.
  • Cover with foil, and bake for 20 minutes.
  • * You can skip the egg and the cheese if you are making this vegan. I think it will still taste great.

Marinara Sauce
2 pounds tomatoes, peeled, seeded
2 tablespoons olive oil
3 large garlic cloves, chopped
1 6-ounce can tomato paste
5 fresh basil leaves, cut julienne
1 teaspoon salt
Filling
1 1/2 cups whole milk ricotta cheese
1 cup freshly grated Romano cheese
2 eggs, beaten to blend
1/4 pound prosciutto, coarsely chopped
2 tablespoons minced fresh Italian parsley
16 Manicotti Crepes
6 ounces mozzarella cheese, cut into 1/4x1/4x3-inch strips
5 fresh basil leaves
Additional freshly grated Romano

3 eggs
1 cup water
1 1/2 cups unbleached all purpose flour
Olive oil

Steps:

  • For sauce:
  • Chop tomatoes in processor. Heat oil in heavy medium saucepan over medium heat. Add garlic and cook until soft (do not brown), about 1 1/2 minutes. Stir in tomato paste, then tomatoes, basil and salt. Simmer until sauce thickens, stirring occasionally, about 30 minutes. Set aside.
  • For filling:
  • Beat ricotta in medium bowl until smooth and creamy. Mix in 1 cup Romano cheese, eggs, prosciutto and minced fresh parsley.
  • For Crepes:
  • Mix eggs and water in blender. Add flour and blend batter until smooth. Let stand 30 minutes. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.)
  • Heat crepe pan or heavy small skillet over medium-high heat. Brush pan lightly with olive oil. Remove pan from heat. Stir batter and ladle 2 tablespoons into corner of pan, tilting so batter just coats bottom. Return excess batter to bowl. Cook crepe until bottom is set (do not brown), about 5 seconds. Loosen edges with knife. Turn crepe and cook until second side is set (do not brown), about 5 seconds. Repeat with remaining batter, stirring occasionally. (Can be prepared ahead. Layer crepes between sheets of waxed paper and cool completely. Wrap tightly and refrigerate 3 days or freeze 1 month. Bring to room temperature before using.)
  • For Assembly:
  • Preheat oven to 350°F. Spoon 2 1/2 tablespoons filling down center of crepe. Place 1 mozzarella strip atop filling. Fold both sides of crepe over filling. Arrange seam side down in large baking dish. Repeat with remaining filling and crepes. (Can be prepared ahead. Cover crepes and sauce separately and refrigerate 1 day or freeze up to 2 weeks. Bring crepes to room temperature before baking. Rewarm sauce over low heat, stirring occasionally.)
  • Stir whole basil leaves into sauce. Pour sauce over crepes. Sprinkle lightly with additional Romano cheese. Cover tightly with foil. Bake until heated through, about 35 minutes.

This is the first recipe I have created with tofu and it is delicious! The green pepper, onion, and mushrooms combine for a wonderful taste. If you haven't tried tofu yet, give it a try! This is a super easy recipe and I am sure you won't be disappointed. The tofu takes on the other flavors and has a great texture for this recipe. I hope you enjoy it as much as we did!

8 ounces firm tofu (drained, rinsed, and patted dry)
8 ounces low-fat ricotta cheese
8 ounces mozzarella cheese, shredded
1 small green pepper, diced
1/2 small onion, diced
4 mushrooms, diced
2 -3 cloves garlic, minced
1 jar newmans own mushroom marinara sauce (or your choice of marinara sauce)
12 manicotti
garlic salt (to taste)

Steps:

  • Preheat oven to 350 degrees.
  • Boil the manicotti shells as directed on the package.
  • Drain the manicotti and set aside to cool.
  • Crumble the tofu into small pieces (resembling cottage cheese).
  • Combine tofu, ricotta, half of the mozzarella, green pepper, onion, mushrooms, and garlic in a large mixing bowl.
  • Mix ingredients well.
  • Grease a large baking dish.
  • Stuff each manicotti shell with the filling and place in the baking dish.
  • Pour the marinara sauce evenly over all of the stuffed manicotti shells.
  • Top with the remaining mozzarella cheese.
  • Sprinkle with garlic salt (to taste).
  • Bake covered for 35 minutes.
