Time 30m

Number Of Ingredients 17

3 tablespoons butter (divided)
1 tablespoon olive oil
1 pound boneless (skinless chicken breasts, cut into ½-inch strips)
½ teaspoon kosher salt (divided)
1/4 teaspoon black pepper (divided)
1 small yellow onion (chopped)
3 cloves garlic (minced (about 1 tablespoon))
2 teaspoons Italian seasoning
¼ teaspoon red pepper flakes (optional; or reduce to 1/8 teaspoon if sensitive to spice)
1 14-ounce can low-sodium chicken broth
1 1/2 cups nonfat milk (plus additional as needed)
6 ounces dry whole wheat ziti pasta or similar pasta (such as penne, rigatoni, or fusilli (about 2 1/4 cups))
1 medium head broccoli (cut into florets (about 3 cups))
1 14 ounce can artichoke hearts in water (drained, cut into quarters, and patted dry)
2 tablespoons freshly squeezed lemon juice (for even more lemon flavor, add the zest also)
1/4 cup grated Parmesan cheese (plus additional for serving)
2 tablespoons chopped fresh parsley (plus additional for serving)

Steps:

  • Heat 1 tablespoon butter and 1 tablespoon oil in a large, deep skillet or Dutch oven over medium high. Once the butter is melted, add the chicken and sprinkle with ¼ teaspoon salt and black pepper. Saute until the chicken is golden on the outside and completely cooked through, about 5 minutes. With a large spoon, remove the chicken to a plate and cover to keep warm. Set aside.
  • Reduce the heat to medium. Add the remaining 2 tablespoons butter and the onion. Cook until the onion begins to soften, about 3 minutes. Do not let the onion brown (adjust the heat as needed if it starts to brown). Add the garlic, Italian seasoning, red pepper flakes, and remaining ¼ teaspoon salt. Stir and cook just until fragrant, about 30 seconds.
  • Slowly stir in the broth and milk. Bring to a boil, then add the ziti. Let the ziti boil for 5 minutes, then stir in the broccoli florets. Continue boiling until the ziti is al dente, about 5 to 7 minutes more. Stir often to make sure the ziti cooks evenly. If at any point the pasta looks too dry, splash in additional milk as needed.
  • Stir in the artichoke hearts, lemon juice, Parmesan, parsley, and reserved chicken. Taste and adjust seasoning as you like. Enjoy hot, with a sprinkle of extra Parmesan and parsley as desired.

ZESTY CHICKEN, BROCCOLI & ZITI

Zesty Chicken, Broccoli & Ziti image

This zesty version of a childhood favorite is sure to please even the adults. Very tasty but without being too spicy for the kids. NOTE: Depending on the cajun seasoning you use, you may need to cut back on the amount in order to adjust the spice level. Some cajun seasonings are FAR stronger than others, and the one I had used was relatively mild.

SKILLET ZITI WITH CHICKEN AND BROCCOLI

Skillet Ziti With Chicken and Broccoli image

From the www.cookscountry.com website: We are always on the lookout for quick main-course pasta dishes that are easy to prepare. Ziti with chicken and broccoli is a classic pasta dish that, while pretty easy to make, typically requires a few pots or pans and several steps to prepare. And the flavor is rarely worth all the effort. Could we make ziti with chicken and broccoli in just one pan and make it taste really good? Here's what we discovered: Test Kitchen Discoveries Use a large nonstick skillet that can accommodate all the ingredients. Brown the chicken, but don't cook it through completely. It will finish cooking as it simmers in the sauce with the pasta. Add roasted red peppers for flavor and color contrast. Rinse the peppers well and blot them dry to remove all of the brine in which they were packed before adding them to the sauce. Cut the broccoli into uniform 1-inch pieces to ensure that they cook evenly in the sauce. Cook the pasta in a blend of chicken broth and milk for a rich, slightly creamy flavor that's not too rich. NOTE: Roasted red peppers are sold in jars of different sizes. One 12-ounce jar is enough for this recipe. Sun-dried tomatoes can be substituted for the roasted red peppers. This recipe also works well with penne.

Tips:

  • Use fresh ingredients: Fresh vegetables, herbs, and spices will give your dish the best flavor. If you can, try to buy organic produce whenever possible.
  • Don't overcrowd the pan: When cooking chicken or broccoli, make sure to give them enough space in the pan so that they can cook evenly. If you overcrowd the pan, the food will steam instead of fry and will not brown properly.
  • Cook the chicken thoroughly: Chicken should be cooked to an internal temperature of 165 degrees Fahrenheit. You can check the temperature with a meat thermometer.
  • Don't overcook the broccoli: Broccoli should be cooked until it is tender but still has a bit of a crunch. If you overcook the broccoli, it will become mushy.
  • Use a flavorful cheese: The cheese you use in your ziti will make a big difference in the overall flavor of the dish. Choose a cheese that has a strong flavor, such as Parmesan or cheddar.
  • Serve immediately: Ziti is best served immediately after it is made. The pasta will start to absorb the sauce and become mushy if you let it sit for too long.

Conclusion:

Zesty chicken broccoli ziti is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor and is sure to please the whole family. With a few simple tips, you can make this dish even better.
