SPICY OVEN-FRIED RICE WITH GOCHUJANG AND FRIED EGGS
This crunchy, tasty, not-really-fried rice gets a big umami punch from gochujang, the fermented Korean red-pepper paste that's worth keeping in your fridge to perk up all sorts of dishes. As with any fried rice, you can add raw or cooked vegetables according to what you have on hand (though you'll want to add cooked vegetables a little later in the cooking process). If you don't have brussels sprouts, you could use any type of cabbage. Broccoli or cauliflower would be great substitutes for broccolini, and butternut squash can replace the carrots. The fried egg on top makes it feel like a more substantial meal, but you can leave it out for a lighter dinner. If you are a vegetarian, leave out the sausage, or add some smoked tofu. The dish is endlessly customizable.

Steps:
- If using uncooked rice, combine the rice and 2 1/2 cups water in a small, deep saucepan and bring to a boil. Reduce the heat to a simmer, cover and cook until all the water has been absorbed, 35 to 40 minutes. Let stand 10 minutes, covered, then spread out on a large baking sheet to cool completely.
- Heat the oven to 450 degrees. Add 1 tablespoon neutral oil to a large rimmed baking sheet, and add the sausage. Cut it into smaller pieces right on the baking sheet. Transfer to the oven to cook, 5 minutes. Using a wooden spoon, break the sausage into smaller pieces again, then cook until no longer pink, 2 to 3 minutes longer.
- Add the carrots, scallion whites, mushrooms, brussels sprouts and broccolini to the sheet pan, stir well to coat with the oil, and sprinkle lightly with salt. Cook until the vegetables have wilted, about 10 minutes, stirring halfway through.
- Meanwhile, whisk together the gochujang, tamari and remaining 1 tablespoon neutral oil in a large bowl. Add the cooked rice and stir until evenly coated.
- Remove the baking sheet from the oven. Add the rice, stirring to combine with the vegetables, then press the mixture down with the back of a spatula. Return to oven and cook until rice is getting crisp on the bottom, 20 to 25 minutes, stirring once about halfway through and pressing down again. (If serving with fried eggs, begin cooking them about 5 minutes before the rice is done.)
- Divide oven-fried rice among plates or bowls and top each portion with a fried egg, if using. Drizzle with sesame oil, sprinkle with the scallion greens and serve immediately.

BASIL AND TOMATO FRIED RICE
Summer's dynamic duo of tomato and basil make a surprising appearance in this aromatic fried rice. The tomatoes cook down slightly and become sweeter, coating the rice in their vibrant, sun-kissed juices, while basil adds a peppery perfume. This recipe is very adaptable, so make it your own. Use any tomato variety you like. Add more or less basil, or use Thai or holy basil in its place for even bolder flavors. If you want more heat, leave the seeds in the chiles. Finally, for a fresh element, serve with cucumber slices and a lime wedge on the side.

Steps:
- In a bowl, whisk the eggs with 1/2 teaspoon salt.
- Heat a large wok or 12-inch well-seasoned cast-iron or nonstick skillet over medium-high. When hot, add 1 tablespoon of oil, then pour in the beaten egg. Cook for 15 to 30 seconds, allowing the bottom to set slightly, before stirring and turning until just set. Break up the egg slightly, then remove from the wok and set aside.
- Heat the wok over high. Add 2 tablespoons of oil, along with the onions, and stir-fry for 1 minute, until slightly softened. Add the garlic and bird's-eye chiles and stir for 15 to 30 seconds, until fragrant. Next, add the tomatoes and 1 teaspoon of salt, and cook for 3 to 4 minutes, tossing every now and then, until the tomatoes are softened. (Reduce heat to medium-high if it starts getting too smoky or the garlic begins to scorch.)
- Add the rice, soy sauce and half the basil, and season with 1 to 2 teaspoons of salt, to taste. Reduce heat to medium-high and stir-fry for 5 to 6 minutes, allowing the rice to soak up the tomato juices. As the liquid cooks off, the rice will char (though less so if using a nonstick pan) and develop some smoky flavors.
- Add the egg and remaining basil and toss for 1 minute. Turn off the heat and check seasonings, adding some black pepper and more salt if needed. Serve immediately.
Tips:
- Cook the rice perfectly: Use a rice cooker or follow the package instructions for perfect rice. The rice should be cooked al dente, not mushy.
- Choose the right vegetables: Use a variety of colorful vegetables to add flavor, texture, and nutrients to the rice. Some good choices include carrots, peas, broccoli, bell peppers, and onions.
- Use fresh ginger and garlic: Fresh ginger and garlic add a ton of flavor to the rice. If you don't have fresh ginger or garlic, you can use dried, but the flavor will be less intense.
- Don't be afraid to add some heat: If you like spicy food, add a pinch of red pepper flakes or chili powder to the rice. This will give it a nice kick.
- Top it with your favorite toppings: Once the rice is cooked, top it with your favorite toppings. Some good choices include fried eggs, scallions, peanuts, roasted sesame seeds, and hot sauce.
Conclusion:
Oven-fried rice is a delicious and easy-to-make dish that is perfect for a quick and healthy meal. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying dish that the whole family will love. So next time you're looking for a quick and easy meal, give oven-fried rice a try!
