Tips:

  • To ensure a moist and fluffy damper, make sure to use self-raising flour and baking powder. If you don't have self-raising flour, you can add 2 teaspoons of baking powder to plain flour.
  • Do not overmix the batter, as this will result in a tough damper. Mix just until the ingredients are combined.
  • Use fresh zucchini for the best flavor and texture. Grating the zucchini will help it to distribute evenly throughout the damper.
  • Feel free to experiment with different types of cheese. Cheddar, parmesan, and mozzarella are all popular choices.
  • If you want a crispy crust, brush the top of the damper with milk before baking.
  • Dampers can be cooked in a variety of ways. You can bake them in the oven, cook them in a frying pan, or grill them. The cooking time will vary depending on the method you choose.
  • Allow the damper to cool slightly before slicing and serving. This will help to prevent it from crumbling.

Conclusion:

Zucchini and cheese damper is a delicious and versatile bread that can be enjoyed for breakfast, lunch, or dinner. It is easy to make and can be customized to your own taste. Whether you are looking for a quick and easy weeknight meal or a special treat for a weekend brunch, zucchini and cheese damper is sure to please.
