3 cups grated zucchini
3 cups all-purpose flour
3 tablespoons ground cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup unsweetened applesauce
3 tablespoons vanilla extract
3 eggs
3 tablespoons butter, melted
1 cup chopped walnuts

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Grease 2 8x4-inch loaf pans or 2 12-cup muffin pans.
  • Place the zucchini in a strainer and set aside to drain into a bowl or sink.
  • Sift the flour, cinnamon, baking soda, baking powder, and salt together in a large bowl. Create a well in the middle of the flour mixture; combine the applesauce, vanilla, eggs, butter, walnuts, and drained zucchini in the center of the well. It is even great when made with wheat flour. Be careful to check the doneness before you take it out. It is easy to under cook due to the darker color but also easy to over cook because it looks the same as timed right.

Number Of Ingredients 11

3 eggs
2 cups sugar (my family likes the molasses and brown sugar) or 1/2 cup molasses and 1 c. brown sugar (my family likes the molasses and brown sugar)
1 cup vegetable oil
1 tablespoon vanilla
2 cups bleached wheat flour or 1 ground whole wheat and white flour
1 tablespoon cinnamon
2 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon salt
2 cups finely grated zucchini, drained and packed
1 cup nuts (any kind) (optional)

Steps:

  • Preheat oven to 350 degrees. In a medium mixing bowl cream together first four ingredients and set aside.
  • Sift together until well mixed.
  • Flour, cinnamon, baking soda, baking powder, and salt. Stir in zucchini then add liquid mixture. Stir in nuts and spoon into well greased (hint, if you pan spray then also lightly dust the pan with flour, it almost guarantees that it won't stick) loaf pans.
  • Bake on center rack for 55 minute or until knife comes out clean.
  • Allow to cool most of the way before cutting, but it is good slightly warm. You get a better flavor if it is not hot. It is good spread with butter or cream cheese.
