ZUCCHINI BREAD MADE WITH BROWN SUGAR AND MOLASSES
I have been making this zucchini bread for years now. I got it from a friend of mine and we used to make it and give it out for Christmas in baskets. Everyone seems of love it and always want more. This bread will come out darker, but is not as sweet as made with white sugar. If you have a regular zucchini bread recipe just substitute the white sugar with brown. You also can add 1/2 cup of white sugar instead of 2 cups of brown if you want a lighter bread.

Tips:
- For a moist and flavorful zucchini bread use 3 cups of grated zucchini. If you don't have enough zucchini you can add grated carrots or apples.
- Be sure to squeeze the excess moisture out of the zucchini before adding it to the batter. This will prevent the bread from being too watery.
- Use a combination of brown sugar and molasses to add a rich, caramel flavor to the bread.
- Add a teaspoon of cinnamon and 1/2 teaspoon of nutmeg to the batter for a warm, autumnal flavor.
- Don't overmix the batter. Overmixing will make the bread tough.
- Bake the bread in a greased and floured loaf pan for 55-65 minutes or until a toothpick inserted into the center comes out clean.
- Let the bread cool completely before slicing and serving.
