Time 1h10m

Yield 20 serving(s)

Number Of Ingredients 13

3 eggs
1 cup honey
1 cup vegetable oil
1 tablespoon vanilla
2 cups grated unpeeled zucchini
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1 cup chopped walnuts or 1 cup pecans

Steps:

  • Preheat oven to 375 degrees F (190C).
  • Butter two 8 x 4 inch loaf pans.
  • Beat eggs well.
  • Add oil, then honey (put honey in measuring cup after oil because the oiled cup will allow the honey to drip out more easily) and vanilla.
  • Stir in zucchini.
  • Mix dry ingredients together.
  • Stir into zucchini along with nuts.
  • Pour into the prepared loaf pans.
  • Bake for 45-55 minutes, or until tested done.
  • Cool in pans for 15 minutes before turning out.

Tips:

  • Use fresh zucchini. Fresh zucchini has a higher water content, which makes for a moister bread. If you only have access to store-bought zucchini, be sure to drain off any excess water before proceeding.
  • Don't overmix the batter. Overmixing the batter can result in a tough, dense bread. Mix the batter just until the ingredients are combined.
  • Use a loaf pan that is at least 9x5 inches. A smaller loaf pan will result in a thicker, denser bread. If you only have a smaller loaf pan, you may need to reduce the baking time by 5-10 minutes.
  • Let the bread cool completely before slicing it. This will help to prevent the bread from crumbling.
  • Serve the bread with lemon honey butter. The lemon honey butter is a delicious and easy way to add extra flavor to the bread.

Conclusion:

Zucchini bread is a delicious and versatile quick bread that is perfect for breakfast, lunch, or a snack. It is also a great way to use up leftover zucchini. With its moist, tender crumb and sweet, lemony flavor, this zucchini bread is sure to be a hit with everyone who tries it.
