SHRIMP AND ZUCCHINI MARINARA

Shrimp and Zucchini Marinara image

Yummy! Easy and delicious. Try to use homemade marinara or buy some from your local italian food place. This is also great with just the zucchini or just the shrimp. You can use spaghetti, linguine, shells, bowties etc. and it works great. Use whole grain pasta for a healthier meal.

Tips:

  • Choose the right zucchini: Select firm, unblemished zucchini that are about 6 inches long. Larger zucchini tend to have more seeds and a tougher texture.
  • Slice the zucchini thinly: This will help them cook evenly and absorb the flavors of the marinara sauce.
  • Don't overcrowd the pan: When cooking the zucchini, make sure to leave enough space between the slices so that they can brown properly.
  • Use a good quality marinara sauce: The sauce is the star of this dish, so make sure to use a sauce that you enjoy. You can use a store-bought sauce or make your own.
  • Season the zucchini: Before adding the zucchini to the pan, season it with salt, pepper, and garlic powder. This will help to enhance the flavor of the zucchini.
  • Serve immediately: Zucchini marinara is best served immediately, while the zucchini is still hot and tender.
