Time 1h25m

Yield 6 servings

Number Of Ingredients 11

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup rolled oats
2 tablespoons chopped fresh dill
2 large eggs, lightly beaten
1 clove garlic, minced
1 medium onion, grated
1 medium zucchini, shredded and squeezed dry
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, oats, dill, eggs, garlic, onion, zucchini, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9-by-5 inches. Bake the meatloaf for 30 minutes.
  • Stir together the brown sugar, remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

Tips:

  • Mise en place: Chop all your veggies and stage all your ingredients before you start cooking so everything is ready at your fingertips.
  • Don't skimp on browning the meat: Take the time to brown the meat really well over medium-high heat. This will help develop flavor and create a nice crust on the meatloaf.
  • Use a grater for the zucchini: This will help the zucchini blend seamlessly into the meatloaf and prevent it from becoming too watery.
  • Use fresh zucchini: Fresh zucchini will have a more vibrant flavor and texture than zucchini that has been sitting in the fridge for a while.
  • Don't overmix the meatloaf: Overmixing can make the meatloaf tough. Just mix until the ingredients are combined.
  • Use a loaf pan with a removable bottom: This will make it easier to remove the meatloaf from the pan once it's cooked.

Conclusion:

This Zucchini Ranch Meatloaf is a delicious and easy-to-make recipe that is perfect for a weeknight meal. It's packed with flavor and moisture from the zucchini, ranch dressing mix, and cheese.
