Blooming Asparagus Roll-ups image

The spread that goes on the bread is wonderful. I used sweet Italian sausage when I made this recipe and it paired well with the asparagus. This is one very yummy side dish.

24 stalk(s) fresh asparagus, ends trimmed
4 oz cream cheese with chives
4 oz blue cheese
1/4 c diced red radish
2 Tbsp dijon mustard
2 Tbsp mayonnaise
2 Tbsp mango chutney
12 slice soft bread
1/4 lb bulk Italian sausage, browned, crumbled
1/4 c butter, melted
1 Tbsp smoked paprika

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Stir together cream cheese, blue cheese, radish, mustard, mayonnaise and chutney. Roll each bread slice with a rolling pin to flatten. Spread one side of each with 2 tablespoons cream cheese mixture and top with 1 tablespoon sausage. Place 2 asparagus spears in the middle of each prepared bread slice and roll up. Place each roll, seam side down, on a baking sheet and brush lightly with butter.
  • 3. Sprinkle with paprika and bake for 12 minutes, until golden. So good!
