Boneless chicken thighs w/ creole mustard/orange s image

Number Of Ingredients 8

8 boneless, skinless chicken thighs
1-1/2 Tbsp olive oil
3/4 c lower-sugar orange juice
3/4 c lower-sodium chicken broth
12 Tbsp creole mustard, found in specialty mustard section of supermarket
1 Tbsp honey
1 tsp hot pepper sauce
salt & pepper to taste

Steps:

  • 1. Sprinkle both sides of chicken w/ salt & pepper. Heat oil in lg skillet over medium heat. Add chicken and saute until well browned.
  • 2. Add orange juice and broth. Simmer until chicken is cooked through. Transfer chicken to a plate. Add mustard, honey and hot pepper sauce to skillet.
  • 3. Increase heat to high and, stirring, boil until sauce thickens. Return chicken to pan and simmer until heated through. Place chicken on plates, top w/ sauce.
