Time 30m

Number Of Ingredients 6

1/4 c or 1/2 stick of butter or margarine
30 large marshmallows, or 3 cups miniature
1/4 c light corn syrup
1/2 c peanut butter
1/3 c semi-sweet chocolate chips
4 1/2 c crisp rice cereal

Steps:

  • 1. I found the easiest way was to measure out all the ingredients first before starting the melting process. I measured and put them in separate containers ready to go. Line a cookie sheet with wax paper.
  • 2. Then i melted the butter in large sauce pan over low heat. Add marshmallows. Cook stirring constantly, until marshmallows are all melted. Add corn syrup, stir till well blended. Add peanut butter and chocolate chips, and stir until chips are melted and mixture is well blended.
  • 3. Add cereal: stir until evenly coated. Cool slightly. With "wet" hands, I tried it dry and really messy, shap mixture into 1 1/2 inch balls. place balls on prepared cookie sheet. Cool completely. Store in tightly covered container in cool, dry place.. makes about 3 dozen, at least it does the way I see 1 1/2 inches.....and enjoy..:]

These Boo Bites are a great way to use up leftover Halloween candy. I always have a bunch of leftover Reese's Pieces and Kit Kats, so this is a perfect way to use them up.

I was disappointed with these Boo Bites. They were too dry and the marshmallows were too chewy. I won't be making them again.

These Boo Bites were a bit too sweet for my taste, but my kids loved them. I think I'll try making them with dark chocolate next time.

I'm not a big fan of marshmallows, but these Boo Bites were still really good. The chocolate and peanut butter flavors go really well together.
