Bourbon, Peach and Ginger Jam image

Number Of Ingredients 7

32 ounces peeled and chopped peaches, frozen or fresh
1/2 cup sugar
4 tablespoons minced ginger
1/3 cup bourbon
1 tablespoon lemon juice
1/2 tablespoon lemon zest
1/2 tablespoon salt

Steps:

  • In a saucepan over medium heat, combine the peaches, sugar and ginger. Cook for 10 minutes, stirring every couple minutes. Pour in the bourbon, lemon juice and zest. Simmer until thickened, about 20 minutes. Stir every couple minutes to prevent scorching. Stir in the salt. Store refrigerated for up to 1 month.

This jam is amazing! It's the perfect balance of sweet, tart, and boozy. I love the way the bourbon and ginger flavors come together. I've already made it twice and I'm sure I'll be making it again and again.

I was a little hesitant to try this recipe because I'm not a big fan of bourbon. But I'm so glad I did! The bourbon flavor is subtle and really complements the peaches and ginger. This jam is perfect on toast, biscuits, or even ice cream.
