Boursin n Grape Bruschetta image

You will love this delightful mix of sweet and savory!

2 slice baguette
4 Tbsp boursin cheese
1/4 c red grapes (seedless), sliced in half
4 Tbsp diced tomato
2 Tbsp diced red onion
2 Tbsp diced cucumber
1 Tbsp diced red pepper
1/4 tsp salt
1/4 tsp pepper
1/8 tsp garlic
1 tsp olive oil
dash of dried parsley flakes

Steps:

  • 1. Spread 2 tbs boursin cheese on each baguette slice. Toast in toaster oven for 3-4 minutes, until bread is crispy on sides.
  • 2. In the meantime, mix the rest of the ingredients (except grapes and parsley) in bowl.
  • 3. Top bread with the grapes, arranging them to cover the entire slice.
  • 4. Spoon the mixture over the top, sprinkle with parsley and enjoy!
