Time 15m

Yield 2-4 serving(s)

Number Of Ingredients 9

2 eggs
2 egg yolks
1 teaspoon sage
1 pinch nutmeg
5 ounces beer (Munich Dunkel would be nice)
1 teaspoon minced garlic
salt and pepper
2 cups flour
olive oil

Steps:

  • Saute garlic in oil.
  • Mix eggs, yolks, nutmeg, and beer* until blended.
  • Stir in the garlic.
  • Add flour until a thick batter-like consistency is achieved.
  • Boil water in a large pot.
  • Push spaetzle through spaetzle maker or colander into boiling water; and simmer for 1-2 minutes.
  • Strain spaetzle and spread out on a cookie sheet. Lightly oil and allow to cool.
  • When ready to serve, heat olive oil and saute spaetzle until golden brown.
  • *Beer choice- preferably a brown ale/lager that isn't too bitter. A continental lager like a Munich Dunkel would be my choice. Though a Bock, Maibock, Oktoberfest, Vienna, or Dark American Lager would work.

I would not recommend this recipe to anyone. It's a lot of work for a very mediocre result.

I'm not sure what went wrong with my spätzle. It turned out gummy and sticky. I followed the recipe exactly, so I'm not sure what happened.

This recipe is not worth the effort. The spätzle was dry and the sauce was bland. I won't be making this again.

The sauce was too thin for my taste. I had to add some cornstarch to thicken it up.

The spätzle was a bit too mushy for my liking. I think I'll try cooking it for a shorter amount of time next time.

I'm not a huge fan of spätzle, but this recipe changed my mind. The spätzle is so crispy and flavorful, and the sauce is to die for. I'll definitely be making this again.

This recipe is a bit more time-consuming than some other spätzle recipes, but it's worth the effort. The spätzle is so light and fluffy, and the sauce is rich and flavorful.
