BUSH'S ORIGINAL BLACK BEANS AND RICE image

1 tablespoon olive oil
3/4 cup finely chopped onion
1/2 cup finely chopped green pepper
1 cup diced tomatoes
1 (15 ounce) can BUSH'S® Black Beans, drain and reserve juices
1/2 teaspoon thyme
1 teaspoon garlic salt
3 tablespoons cider vinegar
1/2 teaspoon hot pepper sauce
2 cups cooked rice
Lime wedges (optional)

Steps:

  • In large skillet heat olive oil; cook onion and green pepper until crisp tender; stir in tomatoes, beans, thyme and garlic salt, cook 3 minutes; add vinegar, pepper sauce, and reserved juices continue to cook 5 minutes. Serve over rice. Garnish with lime wedge (optional).
