Butter Tarts - Company's Coming image

Another winning recipe from Company's Coming. The addition of coconut puts a different spin on a classic recipe.

1/2 cup brown sugar, packed
1/2 cup corn syrup
3 tablespoons butter, softened
1 large egg
1/2 cup raisins
2 tablespoons coconut
2 tablespoons pecans, chopped
1 1/2 teaspoons vinegar
1 pinch salt
12 tart shells, or
24 miniature tart shells

Steps:

  • Preheat oven to 375*.
  • Cream brown sugar, syrup and butter will in a medium bowl.
  • Add next 6 ingredients. Stir well.
  • Divide among tart shells.
  • Bake for 20 minutes or 10-15 minutes in mini shells.
