Cabbage Jambalaya image

Good for a New Year's Day meal. Has the basic ingredients for luck for the coming year.

1 lb ground beef
1 lb smoked sausage, cut into thin slices
1 onion, chopped fine
3 stalk(s) celery, chopped fine
1 clove garlic, minced
1 head cabbage, chopped
1 can(s) rotel tomatoes
1 can(s) black eyed peas
1 c water
1 c uncooked rice
salt and pepper to taste

Steps:

  • 1. In large pot, combine ground beef, smoked sausage, onion, celery, and garlic. Cook until beef is evenly browned.
  • 2. Stir in cabbage, tomatoes, peas, water, and rice. Season with salt and pepper. Bring to a boil, then reduce heat to low. cover and cook for 35 to 40 minutes or until rice is done.

This recipe is a great starting point, but I think it could be improved with a few tweaks. For example, I would add more vegetables and maybe some different seasonings.
