A great way to recycle leftover chicken into something new and wonderful. Turkey would work equally well in this creamy salad. Try this over mixed greens or on croissants for a wonderful lunch. This salad is a great way to get your kids to eat their vegetables. My kids love the grapes and almonds, and they don't even realize they're eating celery.

I'm not a fan of grapes in chicken salad, so I substituted dried cranberries instead. It was a great way to add a little sweetness and tartness to the salad.

I'm not a huge fan of chicken salad, but this recipe changed my mind. The combination of ingredients is perfect, and the dressing is not too mayonnaise-y. I'll definitely be making this again.
