Caramel Pecan Pie image

My Mama makes the ultimate pecan pie, I like to make this with caramel because I simply love caramel.

36 caramels
1/4 c water
1/4 c butter - cubed
3 large eggs
3/4 c sugar
1 tsp vanilla extract
1/8 tsp salt
1 1/3 c pecans, toasted chopped
1 9" unbaked deep dish pastry shell
pecan halves - optional

Steps:

  • 1. In a small saucepan, combine the caramels, water and butter. Cook and stir over low heat until caramels are melted. Remove from heat and set aside.
  • 2. In a small mixing bowl, beat together eggs, sugar, vanilla and salt until smooth. Stir in pecans and caramel mixture.
  • 3. Pour into pastry shell - if desired, arrange pecan halves on top.
  • 4. Bake at 350 degrees for 35 - 40 minutes. Let cool and set before slicing.
