Caribbean Chicken image

This chicken dish is sweet, spicy, and full of flavor. We really loved the addition of apples, and think this would be terrific served alongside some wild rice for a special dinner. Enjoy!

Number Of Ingredients 11

1 pkg chicken tenderloins
1 red delicious apple, sliced into very thin wedges
1 Italian pepper, slivered
garlic, minced
1/3 c Worcestershire sauce
2 Tbsp orange marmalade
3 Tbsp butter, or margarine
juice of 1 lemon
Lawry's 30 minute marinade - Caribbean Jerk
2 tsp basil, fresh
cayenne pepper

Steps:

  • 1. 30 minutes to 1 hour before cooking, place chicken in deep dish and cover with about 1/2 bottle of marinade. Place in refrigerator.
  • 2. When ready to start cooking, place chicken on a baking sheet. Bake at 375ยบ until done. Save the remainder of the marinade.
  • 3. Put 1/2 of butter in a frying pan. Cook garlic and Italian pepper. Add basil and cook until peppers are tender; remove from pan.
  • 4. Add more butter to the pan. Then add apple slices. Sprinkle lemon juice over apples to prevent browning, then simmer until apples are softened. Add Worcestershire sauce and marmalade; stir.
  • 5. Return peppers to the pan and simmer briefly. Just before serving, sprinkle with just a touch of cayenne pepper.
  • 6. Serve chicken tenderloins over apple and pepper mixture. Warm the reserved marinade for extra sauce. Add a tossed green salad on the side.
