Steps:
- Cook asparagus until tender then blanch in ice cold water. Dry on paper towels. Prepare marinade; pour over asparagus and refrigerate overnight. Simmer rice vinegar and ginger until 50% reduced. Add 2 tbsp. sugar. Cool. Pour over asparagus about two hours before serving. (If longer, the taste will not be affected, but the asparagus goes a little pale and funny looking)
